Buttermilk Honey Wheat Bread
This bread is delicious! I added another 3/4 cup or so of flour (both wheat and white) because the dough was sticky. I didn't use a bread machine, and just combined all ingredients and kneaded in a stand mixer for about 10 minutes. I let it rise for a little more than 1 hour, then baked for 25 mins. It came out so moist, soft and sweet. Just be sure to add a little extra flour. Great recipe!!

Connie's Zucchini 'Crab' Cakes
I really like this idea. They didn't remind me of crab cakes other than being cakes, but if you're looking for an easy and tasty way to incorporate more veggies into your diet, this is a good one. I used one yellow squash and one zucchini (squeezed all the water out by pressing the shredded squash against the bottom of a colander), and I also added some shredded carrot, onion, and diced green pepper. Lots of Old Bay. I omitted the flour dredge and baked them in the oven at about 400 for about 12 minutes on each side (as someone else here suggested) to save on calories/frying etc. They really turned out great, nice and brown. A little dry, but I think that's because I baked them and because I added some extra crumbs. The Husband says next time he suggest putting a tablespoon or so of olive oil in the mix. I also made a cilantro sour cream to go with them. I'll definitely make them again!

Apple Stuffed Chicken Breast
This is a really good recipe. I really never cook and was surprised how easy it went together. I just butterflied the chicken breasts and stuffed them, I didn't pound them flat. I followed some of the advice of the other reviewers and added more cheese and spices to the apple mixture. I used plain breadcrumbs, but probably could have done without them. I used Dubliner Irish cheese and white cheddar, and a dash of cumin, garlic salt, brown sugar, cinnamon, and a little cayenne pepper. I also salted and peppered the chicken lightly before browning. I used all white wine in the simmer, no broth or water. I gave it 4 stars since I had to add some stuff to it, but I would give it 4 and a half if possible. Considering how low in calories this is (probably still less than 250 with the sugar and extra cheese and wine), and how very tasty, I'm sure I'll make it again. The Husband loved it too!
