I'm kinda of adventurous in the food world. I'm that person who likes exotic and unusual entrees with lots of spice. My husband says he never has a problem trying to decide what to order for me at a resturant, he simply orders the strangest thing on the menu. I'm not your traditional steak and potatoes kind of girl. Even though I like strange and bizarre foods, I do try to stay along the more healthier prepared meals. I'm not big on raw/undercooked meat or organ meat. Some rules:#1 rule: If it's still mooing or moving it's a no-go. #2 rule: Experimenting with lots of spices and herbs are a great to enhance and bring out different flavors of food but don't overpower it. If it burns and brings tears to your eyes all the way down, you can gurantee its gonna burn and bring tears to your eyes on its way out the next day.
My favorite things to cook
Unusual, not your typical meat and potatoes. I'm up for a challenge. Fresh veggies, fresh fish/seafood and fresh herbs, everything fresh. I love cooking cajun, creole, spicy meals and meals with lots of fresh garlic gotta have the garlic even though my husband may not love it much. If I'm still tasting it a couple hours later than it was a good meal. I do like to bake cookies and candies but those are on special occassions like during the holidays. When I don't have much time especially before work (night shift)I like to grill because it requires few dishes to clean up, it fast, healthy, and tastes great.

Snickerdoodles II
Awesome recipe! These cookies didn't have a fighting chance with my family. They didn't even hardly have time to cool off before they were gone. I pretty much followed the recipe completely. The only thing I did differently was I moisten the bottom of a medium glass and dipped it in the cinnamon/sugar mixture and flatten the cookie a little bit. I baked my cookies with a stone cookie sheet and had no problems with sticking. They baked evenly and had a nice soft but crunchy bite to them.

Chicken Enchiladas I
My family loves this recipe! This is probably one of our favorite recipes. I have used it over and over again the last couple of years. I did make a few changes to it. I added a little of red cayeene pepper to the meat/sauce mix for an extra kick and some extra cheese. One other thing that I have done if your not too concerned about the added calories is you can fry the flour tortillas in crisco just before stuffing them. The trick is not to fry them for too long, just long enough for the tortilla to begin bubbling. You whisk them out of the pan when you see the air pockets beginning to brown and expand with a pair of metal thongs and pretty much start stuffing and rolling them when they are hot. You can let them cool a little if needed. Very tasty with a nice crispy texture and they also hold their shape better. Follow the remaining directions of the recipe as it states and then serve. Yummy!! Usually we have extra meat/sauce mixture left I just pour it over the tortiallas like a sauce and cover with cheese. This variation isn't of course for light weights who are worried about calories and fat, but it's well worth the extra effort. Try using hamburger too for another flavor adventure.

Cola Easter Ham
Excellent! We made our ham this way for our Easter meal. The ham came out moist and yummy. I used a spiral cut ham which worked nicely. My husband loved it. He has never been a big fan for tradtional hams made with cloves and spices. This is a great replacement recipe for any traditional ham recpies that use lots of spices, especially for people who are sensitive to them. Highly recommended.
