Mom's Best Meatloaf
Made this meatloaf yesterday. Was weary about adding the cornmeal to it, I did and I'm glad I did. I have to say this was the best meatloaf I've had in a long time. The only thing different that I did was to add a very strips of bacon over the top of the sauce/meatloaf, cause my guy likes bacon so much, it was really good. Made with real mashed potatoes and corn on th cob. Awesome! Passing this recipe to my friends to try. Thanks for sharing with us.

Creamy Au Gratin Potatoes
These potatoes are soooo good. I did alter the recipe a little. I added 1/2 tsp more salt, because to me, potatoes always absorb the salt, so I added alittle extra. I followed the recipe the way it is printed. I noticed that when I added the sauce to the top of the potatoes, I had to shift the potatoes alittle so the sauce would not run over the pan. I also used the reynolds non stick foil, (good move) and also put the dish on a cookie sheet so I wouldnt have a mess (glad I did). Next time, the ingredients are perfect, I'm glad I doubled the salt, however, I will layer the potatoes with the onion, but I will put some of the sauce over the potatoes, then do another layer of potatoes, then top with the remaining sauce. These were the best homemade au gratin potatoes, my boyfriend 2 helpings and said they were the best. Leftovers microwaved, just as creamy. Try them

Chicken Enchiladas V
I made this recipe yesterday, took the advice of the other cooks, doubled the sauce mixture, used a can of cream of mushroom and a can of cream of chicken soup. Used 2 tablespoons of taco seasoning and used a mexican cheese blend. I followed pretty much the recipe to build the enchiladas. My boyfriend who doesnt care for the red enchilada sauce absolutely loved these chicken enchiladas. He couldnt believe how good they were. Thanks for a tasty recipe. I will be making these again.
