Quick and Easy Chicken Noodle Soup

EXCELLENT! Here are a couple of my recommendations: 1) Double the Onion and Celery 2) I use 20oz of Chicken Breast 3) Cook the chicken for 20 minutes IN the broth/veggie mix, don't worry about pre-cooking it. Once it's cooked, take it out and chopped into bite size pieces. 4) Add the cooked chicken and noodles into the pot and cook for 10 minutes or until noodles are done. Saves time and tastes great! Low Sodium Chicken Broth worked great for me...I'd rather slowly add salt and have control over how much goes in. Enjoy! I know I did...

Guacamole

Ok, so I had to come back and review this recipe. I've been making this Guacamole for the past couple years and wow, it's a winner. I follow the directions exactly. It gets rave reviews from all that partake of it. Thanks for sharing!

Filet Mignon with Rich Balsamic Glaze

Thanks to the good advice to the previous reviewers... I took a little advice from others, I took the meat out about 30 minutes ahead of time, I grilled the meat on the grill with a little seasoning. I started the reduction about 30 minutes before the meat would be done, so that it would have plenty of time to reduce. I added a large pinch of brown sugar, double the balsamic and used a Merlot for the red wine. Once I pulled the steaks off the grill, I let them rest. Then, I added Feta cheese to the top, broiled until melted, then drizzled with the reduction. It was just what I was looking for! See my pic for the result.

Fruit Dip II

I thought this was a great fruit dip recipe. I adjusted it based on others' recommendations with the following: Added 1/2 tsp Lemon Juice Added 1/2 tsp Vanilla Extract I mixed it all with a hand mixer...turned out great.

Best Big, Fat, Chewy Chocolate Chip Cookie

Vegetable Biryani

This turned out horribly. I followed the directions word for word. Here's my thoughts on where it went wrong: 1) Too much garam masala. This has to be some horrible mistype on amount. 2 Tbsp is just entirely too much. 2) Soaking the rice for 30 minutes is too long. This causes the rice to be too brittle. It should be soaked for around 10 mins. 3) Simmering frozen vegetables for 20 minutes turns them into mush. 20 minutes would probably be fine for fresh. I'll shoot to find another recipe.

Grilled Asian Chicken

I give this one 5 stars. I thought it was a very easy recipe and resulted in an excellent asian grilled chicken. Reminded me of an Japanese restaraunt I used to go to in downtown LA. I made everything per the recipe, except I doubled the marinade. This left me plenty for basting and drizzling. I also sprinkled sesame seeds on the sliced chicken. I served over Jasmine rice. Highly recommended.

Chicken Fried Chicken

I thought this was a great recipe. I made it as written and it turned out great. I did end up using a tad more oil because I had a large frying pan. I also made a Country Gravy to go with it.

Mom's Country Gravy

Browning of the flour didn't work so well for me. Not sure if it got too dark or what, but I ended up discarding it and starting over. I used the same measurements, but didn't brown the flour first. I got the milk and spices boiling, then slowly added the flour, simmered this until it thickened.

Southwest Chicken Soup

I thought this recipe was very tasty...I pretty much followed it exactly, with the exception that I used all broth instead of water and I added additional broth to thin it out. I also let it simmer longer after all the ingredients were added, approx. 20 more minutes. Will definitely be part of my "regulars" list.

African Curry

I made this dish tonight, I think it was a good base, but for me it seemed to be missing something. I added some cayenne as others had recommended, I think this definitely helped. I also used 3 1/2 tsp of curry. I felt it could have been a tad sweeter, I think another poster recommended 1 Tbsp of sugar, I think I'll give that a try next time. Overall, a start to something good, just need to get the adjustments figured out.

Luscious Spinach Artichoke Dip

I thought this recipe was excellent. I followed some of the suggestions. I used a whole block of 1/3 Light Cream Cheese, used Marinated Artichoke Hearts, and also topped it with Mozzarella. It turned out excellent.

Butternut Squash Soup

I'll keep it short. Super soup. I only used 8oz of cream cheese and used the 1/3 fat version. I only used 2 1/2 cups water. I used about 1/4 tsp cayenne, maybe a tad more because I like a little more spice. I roasted it with EVOO and Salt and Pepper (350 for 45min). I also added extra fresh ground pepper at the end...Superb.
