Chocolate Chip Banana Muffins
SO good!! I substituted 2/3 the white flour for whole grain flour and used the yogurt, as the recipe suggested. I really liked it with the mini chips. I think the regular chips would have been too big for the muffins. They really were like cupcakes except healthy! My very picky husband who normally doesn't like sweets thought they were fantastic. I made 24 earlier this week, he took 12 in to work (they were gone that day) and the other 12 are gone now too. Going to make them for the second time this week. This time, I'll substitute apple sauce for oil and maybe try to freeze some so I'm not making these every week ;). Oh, will also decrease the baking time just a bit. They were almost burned on top last time, but I'm also at high-altitude which can make baking a bit wonky sometimes. Thanks for the great recipe!

Ultimate Irresistible Granola
Unreal granola. Sooooo yummy and so easy. I don't need to try any more recipes after this one. I omitted the walnuts (hubby or I don't like them), used golden raisins and added 2 tsp. of salt as per another reviewer, but I will probably add 1 - 1 1/2 tsp. next time.

"Let it cool"?? Who are YOU kidding? I made a serious dent in the thing before it was cool enough to eat (that's OK. We're taking it camping and they'll never know ;)). This has got to be one of the easiest recipes I've ever made. The whole thing took about 15 minutes to put together. I didn't have a bundt pan, so I used the 2-piece pan. Once it was greased, I placed the pan on a tin foil lined cookie sheet and folded the sides of the foil up around the pan. Didn't leak, but thank goodness I had the warning. Used butter instead of margarine, but will try adding lecithin to keep the brown sugar and butter together a little more. Will also wait a few minutes before flipping over onto a cake pan (instead of right away as other reviewers suggested). Most of the sugar mix ended up at the bottom instead of seeping through because it was so hot. However, this might be a good thing as it really is sweet enough as it is without more "sauce" on top. Omitted the walnuts and just added raisins. Tastes just like a cinnamon bun right out of the oven! Wonder how it will taste cool instead of warm. Will see tomorrow, but will definitely make again regardless!!
