I am a working professional with three young children. My husband is a stay at home Dad and I work full time. Needless to say we have our hands full, but love every minute of it.
My favorite things to cook
I love to make New Mexican food as this is the food I grew up eating. It is my comfort food! My husband (although from California) has learned to really appreciate the Native American influences in my traditional cooking.
My favorite family cooking traditions
Every year before Christmas there is a huge cook-a-thon at my grandmother's home were many family members get together and make "empanaditas". They are little minced meat pies that are deep fried. I personally don't like to eat them, but making them is sure a lot of fun. The family makes a complete day of it. We have quite the assembly line and will usually make 20-30 dozen.
My cooking triumphs
I am over the moon that I FINALLY made chicken on the BBQ grill that not only had a great flavor, but was tender and moist. I had such problems with either undercooking or overcooking my chicken on the grill. My husband insists on cooking outdoors the way "real men" BBQ...charcoal! It has taken me a LONG TIME to figure out how to regulate the coals. All my previous outdoor grilling experiences were with gas/propane with actual heating controls.
My cooking tragedies
Banana bread in my convection oven. WHAT A MESS!!! Still haven't mastered the art of convection cooking. :o(
