I'm married to a great guy, have 2 kids I love tons, and I love doing and training for Triathlon's...I am trying to eat for better health, but not to be too crazy about my food...it is more than fuel to me.

Corned beef and cabbage on St. Pattys day no matter what! Fat content be damned!

I am known as the Salad Queen in my family...I make some great green salads.
My cooking tragedies
The infamous "spaghetti sauce" chili I made as a young pregnant inexperienced cook is really the big one my husband still brings up (after 15 years!) , but it is really only one of many! :-) Pan cooked porkchops are still my nemisis...too dry always!

Lamb Chops with Balsamic Reduction
I love lamb chops on the grill-decided to try this recipe...AWESOME! I followed the recipe and used good vinegar as suggested...delish! I can't wait to make this when my organic share of shallots comes in later this summer. Served it with roasted garlic asparagus and salad...a perfect Weekend splurge dinner!

Broiled Tilapia Parmesan
All I can say is Yum! Made this tonight following directions plus added panko breadcrumbs and old bay as suggested. Awesome and easy! My husband loved it and the fact that the house doesn't smell of fish! I love the idea of good fish at home!

Rita's Eggs Strata
Made this for xmas morning...it wasn't savory...it was rather bland and GREASY. I didn't even use all of the cheese suggested in the recipe. Maybe my tastes have changed, but I won't be making this again. Sorry!
