Carrot Cake III
I made this cake for my co-workers yesterday and they absolutely loved it. I had to increase recipe to 27 servings. Seems like a lot but I baked it in 2 parchment lined 9" springform pans for 38 minutes, greased and floured sides. I used 1 cup veg oil, 3/4 cup applesauce, 1 cup white sugar, 1 1/2 cups lt brown sugar, 2 1/2 Tablespoons Vanilla extract, 2 1/2 Tablespoons ground cinnamon, 3/4 tsp nutmeg, grated orange rind. For the frosting I increased the softened cream cheese to 28 ounces. Because of the reviews saying it could use more flavor, I did a little tweaking of this recipe. I had 1 piece left over to take home, and the next day after sitting, it even had more flavor, Awesome! Lorraine
