Cranberry Hootycreeks

I made this recipe, exactly as directed in the recipe. The butter/egg/vanilla mixture doesn't really look right after beating. However, once the other ingreadients are added, it DOES work out just fine. The only complaint I had was that you had to mix the heck out of it with a spoon to get everything to blend properly. The cookie is very sweet and delicately flavored, while chewy from the oatmeal. Actually a bit too sweet for me, but my kids inhald the cookies. I'll make the jars and give the cookie mix for Christmas, because it is pretty and most people will like it. Good recipe, but not my favorite.

Golden Pork Chops

No one in my family of 6 liked this recipe. I rinsed off the sauce and re-served the chops with barbecue sauce. I don't recommend this recipe

Cranberry Sweet Potato Bake

Excellent and light recipe. Based on previous suggestions, I peeled, sliced, and layered raw sweet potatoes. Dumped the cranberries on top and mixed a little. Then poured orange juice mixture (made with Splenda instead of sugar) on top. Skipped the granola, because I ran out unexpectedly. Baked, covered! Wow! I will make every holiday. I don't understand why some say it is too sweet. It was light, tart, and not at all too sweet!

We don't like the soy sauce. We threw it out. With 1 tsp Worceshire sauce instead of the soy sauce, it's a 5 star recipe.

Carol's Chicken Salad

I have two complaints about this recipe. First, it was way too dry for our taste. I doubled the mayo dressing, and that fixed the dryness problem. Second, the poultry seasoning gave the salad a harsh taste. Perhaps if I hadn't doubled the dressing, it would have been okay. I'm going to try the recipe again, doubling the dressing and leaving out the poultry seasoning. The texture and crunch of the salad was wonderful. I'll repost after I try it again, without the poultry seasoning.

Wow! I was totally unprepared for how good this was! I baked at 350 for an hour, and then turned up to 425 for about 5 minutes. Loved it!

Downeast Maine Pumpkin Bread

I've been making a honey version of this break for years. Skip the water, replace the sugar with 1 1/2 cup honey, increase ginger to 1/2 tsp. The result is WONDERFUL !!

Dried Cherries, Pecans and Rosemary Brie en Croute

We made this for Thanksgiving, because it looked so pretty. Out of 12 people, one loved it and the rest of us did not like it. I've had a "sweet" baked brie before that I loved, so I'll keep looking for another recipe.

Boston Iced Tea

This is absolutely terrific served icy cold! Intense full flavor. I used Splenda and 12 cold brew tea bags. I was hoping to cut down on the sweetener - but you really do need a full cup to counter the bitterness of the cranberry juice. I will be making this all the time. Just be sure to serve it VERY COLD. It doesn't taste that great lukewarm.

Parmesan Chicken II

My kids hated this. My husband said it was "OK." The drumsticks were goopy in the baking pan, and the bottom of the chicken was soggy. I'm going to try it again with chicken breasts on an elevated baking rack (so that the chicken doesn't sit in its own fat while baking). Also, my drumsticks were pretty large, and they required extra cooking time. Perhaps, that was part of the problem. I think the taste was good, but the texture and look of the chicken really turned my family off.

Sugar-Free Raisin Bars

I make a lot of sugar-free recipes, and this one is excellent! These bars are moist, delicate, tasty, and very sweet. Don't skip the step of cooking the raisings and margarine in the hot water. This step really releases the sweetness of the raisins into the recipe, and the raisings will be SOOOO tender in the finished product. I actually am going to cut back on the splenda from 1/2 cup to 1/4 cup next time, as I don't like my food quite as sweet as this one was. Still 5 stars!

No Sugar Apple Pie

I love this apple pie. I make it with apple cider instead of apple concentrate, and it is awesome! My entire family begs for it. Just be careful of the amount of apple cider, or the pie will boil over like crazy. Cook it on a cookie sheet. This is the only apply pie that I make now.

Beef Barley Vegetable Soup

Excellent and easy. I cooked 2 lbs. of chuck in crockpot for 5 hours the evening before I wanted to serve the soup. (Sprayed crockpot with Pam first.) After cooking, I smashed the beef into shreds (in the crockpot with a spoon.) Then, after sauteeing the vegetables, I put everything in the crockpot (including the uncooked pearl barley) and put the crock in the frig. I skipped the sugar, and used 2 extra cups of beef broth plus a couple generous dashes of Worcestershire Sauce. When I woke up the next day, I turned the crock on low and cooked the soup all day. Everyone loved it! I will make this again and again. After reading a few of the other reviews, I'm wondering if some of the reviewers who complained about mushy barley had inadvertently used instant barley in their soup. Whole pearl long-cooking barley holds up much better than instant barley.

Ham Bone Soup

Good soup recipe, with modifications. I left out the green pepper (since we don't like it). I used a huge meaty hambone, and the soup was salty because of it. However, that didn't bother me. The broth, however, seemed kind of lifeless. After I added 8 oz. of tomato sauce, we really like the soup! I'll make this again, but I'll definitely add the tomato sauce.
