Pumpkin Flax Quickbread

This vegan bread is wonderful! I cooked mine for just 45 minutes and the result was a very moist treat. Top with a little butter and cinnamin/sugar and even my husband will eat it! ;) Can't wait to make this on a beautiful Autumn morning...

Chicken Noodle Soup

This soup is great! I'm not a soup fan but I'm having surgery and will need to live on it for a few days. I substituted alphabet noodles to please my toddler and used Swanson low-sodium broth for 8 of the twelve cups. Then I used 2 cups of water, 1 pack of Herbox chicken broth (w/seasoning), and the juice from the pan I baked my chicken in... YUMMY!

To Die For Blueberry Muffins

My 3 year old and I made these muffins last night with frozen blueberries. They turned out very moist and full of flavor. I let him put sprinkles on top instead of the recipe's topping. Will make again. Thank you.

White Russian Tiramisu

This was an okay dessert. I love tiramisu but this came out unlike any I've had before. It was quite soggy and the 'cheese' taste was strong. Be very careful to only soak the lady fingers for a second - otherwise you'll have mush.

Easy Eggplant Parmesan

This was not good. The eggplant was not done (it was hard). I followed the recipe (and times) exact. What a bummer! I will be looking for a better eggplant parm recipe. Thanks anyway!

Mocha Chocolate Chip Banana Muffins

These are really yummy chocolate-banana muffins but don't let the 'mocha' part get you too excited. There was no coffee flavor in these moist treats. These are really yummy despite the misleading title. Give them a try!

Award Winning Peaches and Cream Pie

This is my favorite dessert recipe so far! I was worried the cream cheese mix wasn't going to set but after about an hour and a half in the fridge it was PERFECT! I used about 3 small fresh peaches and mixed the cream cheese with peach preserves instead of syrup. VERY RICH! Very sweet. More like a peach cake with cream cheese frosting/cheesecake. Not a "pie". AMAZING! I want to eat the entire thing right now. Will make again. Might try with apple as hubby is not a huge cooked peach fan. THANKS!

Rhubarb Custard Pie IV

This pie is great! It's so easy that it will stay in my regular recipe box. I used half rhubarb and half peeled and chopped granny smith apple. I replaced the nutmeg with cinnamin (because I really can't stand nutmeg). It was yummy hot but best the next morning. It really isn't a custard (as others have noted) but it taste great! Thanks!

These are very dry. I added a little bit of vanilla but followed the rest of the recipe exact. The flavor is great- just DRY. Would be good with coffee or milk.

Strawberry Muffins

I used this recipe but ended up changing it a lot to attempt a healthier breakfast choice for my picky toddler. I doubled the recipe firstly-then swaped 1/2 cup flour for 1/2 cup flaxseed meal. I added 1/2 cup non-fat vanilla yogart, 1 teaspoon vanilla, 1/2 teaspoon cinnamin, and replaced some of the white sugar with honey.

Easy Baklava

I'm so excited I can make baklava at home! It's too easy. Working with phyllo dough was a bit tough at first but after a couple layers I got into it. YumYumYum. Mine did burn a bit. I followed the recipe exact so it could have been an error I made or my electric oven. ANYONE CAN MAKE THIS! Try it!

Chocolate Frosting I

This is an awesome *VERY* chocolate frosting. I was really worried at first when I mixed the butter and cocoa (seemed like not enough butter and was really dark). Then I moved the mixture into my blender (no REAL mixer sadly) and- WOW! After not giving up and adding more and more of the sugar (I had to stir by hand at first each time I added sugar) the frosting got very thick and wonderful! I used the full 3 1/2 cups of sugar and a little more then the called for milk (mine was nonfat). I will NEVER buy chocolate frosting from a can again! Thank you this was my first time making frosting and I feel great. (: Oh, I made cupcakes BTW. I think this might be hard to spread on a large cake. It's kind of like the frosting (icing) you find on donuts (only thicker).

This was so yummy!!! It cost only $4.50 (up in Alaska) for my whole family to eat AND have leftovers. Make sure you keep the pepper and garlic powder handy to give this dish it's flavor while cooking. I used a head of cabbage (I shred it) as the recipe states and can't imagine it turning out as good with coleslaw mix. Really make sure you get a lot of your pork chop grease left in the pan. Not healthy - but SO FRICKIN' GOOD! Oh yah- top with a dollap of sour cream....

Jumbo Fluffy Walnut Apple Muffins

These muffins taste great! They did not rise and were very greasy though. :( Definantly do not use paper liners. Ours were soaked through. I made a couple of changes. I substituted 3/4 of oat flour, 1/4 brown sugar, added an extra 1/2 teaspoon of cinnamin, chopped (not sliced) the apples, and made regular size muffins. I also used brown sugar in the crumb topping. Baked 25 minutes-made 16 muffins. Over all I liked this recipe and will make again! Thanks from one Jen to another! :) EDIT- In an effort to use up apples I made these again today and they rose great and made perfect muffins. YUMMY!

Quiche Lorraine I

I don't know what I did wrong to make this well liked quiche turn out SO BAD but I had WAY too much liquid! Only half of the egg/cream mixture would fit. Came out too mushy and I let it cook an extra 10 minutes. Sorry!

Pumpkin Cheesecake I

This was not enjoyed by anyone in my house. I was *so* disappointed. We love pumpkin pie & cheesecake so I was expecting this to be a big hit. It wasn't! The texture was awful, the spices were way off, and it was not sweet. We topped it with LOTS of Cool Whip and pecan pieces but never finished half of the pie. I would omit ginger & increase the sugar for starters if I ever attempted this recipe again. Sorry!

Smothered Mexican Lasagna

There is WAY too much liquid in this recipe. I'm new to cooking so I try to make everything by the recipe *exactly* when I try something new. BIG MISTAKE. I ended up having to drain my pan (which looked like it was filled with watery soup) to fill the lasagna with the less then flavorful meat mixture. I added cheddar to the top and we ate it- but next time I will use the *idea* of this recipe to create a less soupy (more flavorful) meal. Sorry!

Beef and Broccoli

This recipe was a HUGE letdown. The beef was dry and tasteless by the time the veggies got done. I served it over rice but was VERY unhappy to see little to no gravy. On a positive note- it's very easy to cook. Next time I'll do so with major tweaking. Sorry!
