Vegan Mac and No Cheese

Okay, I read every single review and decided to make this recipe. Not even my 1 or 5 year olds would touch it! I added a bit of extra nutritional yeast (as other reviewers recommended). The sauce was RUNNY not creamy in any way. I tried very hard to like it. It was quite expensive to make. :(

Yummy Sweet Potato Casserole

This is such an easy and yummy recipe! The pecans and brown sugar are a great topping. My husband thought he didn't like sweet potatoes but this proved him wrong! ;)

Quick and Easy Pizza Crust

This crust came out very dry for me. It was edible but certainly not good. It has no flavor so I brushed melted butter and herbs on the edges. There was still a piece left over so I know my Hubby really hated it. It was so solid I think I could have used it as a doorstop!

Ruth's Grandma's Pie Crust

This pie crust was sooooo good! It was buttery and flaky to perfection. Not very sweet which I enjoy. Perfect with Grandma Ople's apple pie recipe on this site. Also for the pumpkin pie I reviewed. I'll never buy a premade crust again!

Oatmeal Chocolate Chip Muffins

These are not beautiful muffins. They did not rise well so they look pretty small. However, I give them a big thumbs up for taste. A yummy breaskfast muffin. I made just a couple changes: I used vanilla half and half in place of the milk, carob chips in place of the chocolate, canola oil in place of the veggie oil, "EnerG Egg Replacer" in place of the egg, and added cin to the topping. These are a bit crumbly but are still 4 stars in my book.

Moroccan-Style Stuffed Acorn Squash

This was really yummy! However, the veggies didn't get soft enough before the garlic and such started burning and sticking to the pan. So we ate them a little bit crunchy. Oh well. :o) The squash was tender and perfecto!!!!

Pumpkin Cream Cheese Muffins

I would rate this recipe 3.5 stars if given the option. Since I couldn't I let my 4 year old be the tie breaker. :o) I followed the recipe with just a few changes. I used "egg replacer" instead of eggs to keep it heart healthy. I used organic raw sugar in place of the white sugar. Finally, I used reduced fat cream cheese. Now the cream cheese filling was AWESOME. I would rate it alone 5 stars. I made that part first and stuck it in the fridge until it was needed. As much as I LOVED the filling I HATED the topping. It did not do it for me at all. The muffin part wasn't very sweet or flavorful - aside from a STRONG rather bland pumkin taste. What REALLY upset me was the muffins STUCK TO THE PAPER! No, the filling did not touch the wrappers. My muffins never stick so I was REALLY disappointed. I made them for a new neighbor but would NEVER share muffins that stick. So BOO to whatever caused that. I'd make them again only if requested by my Hubby.

Blueberry Oat Muffins

I chose these muffins to use up some quick oats that have been hanging around. I doubled the recipe and got 18 normal size muffins. Based on what the recipe states I should have had 24- that was fine with me. :) I made my batch with organic canola oil instead of veggie and used Egg Replacer instead of egg whites. WARNING -these are not very sweet!!! I added a cinnamon, sugar, and butter crumb topping - helped a LOT. If I ever need to use up oatmeal again this will be the path I choose! <3 Great with coffee! Thanks.

Chicken Florentine Casserole

This was wonderful. I did make several changes to keep it heart healthy. I used low sodium cream of mushroom soup, reduced fat parm, SPIKE (salt free) seasoning instead of the Italian and low fat sour cream in place of the half and half. I did not use the bacon or the cheese on top. I made mine with the organic frozen spinach I had on hand. Served over whole wheat rotini. My 4 year old and hubby were very happy. Thanks! The sauce was SUPER!!!

No Bake Cookies III

These are yummy. I made a few changes: I was out of cocoa so I used instant chocolate pudding mix (worked great!), I used chocolate silk soy milk, and reduced fat Jif PB. Next time I will decrease the sugar buy at least 1/4. Mine were not runny at all and taste GREAT!

Pumpkin Chocolate Chip Muffins

These muffins weren't pretty (they didn't rise well) but were moist and delicious. I substituted vegan egg replacer for the eggs, carob chips for the chocolate, and used canola oil. I will be making again! Thanks! :)

Bran Flax Muffins

Pizza Stix

I made these as a special treat for my Hubby. If you are not watching your weight they are AWESOME! I tried using half a cheese stick per roll at first to make it a lil healthier but they were not even half as good as the whole stick set. My son and Hubby ate them all and then asked when I'd make them again.

Unbaked Chocolate Oatmeal Cookies

Tonight I learned INSTANT OATMEAL is *NOT* the same as the oatmeal called for in this recipe. I tried using the regular flavor Quaker Instant Oatmeal (individual packets...all I had on hand). THIS DOES NOT WORK! The taste is great. I just made a mistake that caused them not to get firm.

Spicy Peach-Glazed Pork Chops

This was yummy. I didn't have a few of the ingredients so I used cayenne pepper, red pepper flakes, and soy sauce as subs. I threw some frozen broccoli in the pan the last few minutes. Served all over couscous. Very good. Would be great with white rice (we were sick of rice) and a spring roll on the side.

Pumpkin Raisin Scones

These are pretty good (but I felt not good enough to share with the neighbor I made them for). I *would* rate them as 3 stars if the poster didn't let us know they are more muffin like then scone. Since I was expecting it I say 4 stars for sure. They took 12 minutes per pan of 4 large triangle shaped scones. This recipe made 24 total. I used cranberries instead of raisins.

Best Brownies

I thought these were okay at best, but my husband liked them a lot. I guess that means I'll keep the recipe around until I find something better. The frosting is a waste of time. I had to add a little milk to make it work.

Pumpkin Flax Quickbread

This vegan bread is wonderful! I cooked mine for just 45 minutes and the result was a very moist treat. Top with a little butter and cinnamin/sugar and even my husband will eat it! ;) Can't wait to make this on a beautiful Autumn morning...
