Kathy's Delicious Whole Slow Cooker Chicken

this was THE best chicken recipe we've ever tried! The kids even wanted seconds! I added a couple dashes of (dried) crushed red pepper to give the flavor a little zip. Very good!

Pumpkin Flax Quickbread

this was an easy recipe to put together. I didn't add all the sugar, 1 cup of sugar instead of 1 1/2. I added craisins on the top & a sprinkle of sugar before cooking. I was eager to try this right out of the oven. It looked done on the outside but was mushy inside. After it sat in the fridge it had the consistency of zucchini bread. VERY good! We argued over who got the last piece!

Grilled Tropical Tuna Steaks

this was a recreation of what we paid $26/per plate at a fancy resteraunt! (at home cost $6 pp) Awesome! Served with steamed asperagus & wild rice. Yum!!

Bagel Bread

Hubby liked this, not too soft, not too crispy on the crust. When I made the bread I added shredded parmesan & 1/4 cup of flour I subbed milled flaxseed. I did the dough setting then turned the bread in to bread loaf pan. Cooked it 350 for 35 minutes. Yummmmm!

Chocolate Mug Milkshake

Very yummy!! I omitted the 1/4 white sugar, and went light on the cinnamon. Only had vanilla ice cream so I dumped a bunch of Hershey's chocolate syrup in & it tasted great!

Clare's Whole Wheat Potato Bread

This is darn good bread! Made it in my bread machine, took it out before the second rise and cooked it from there. Might do a little less yeast next time due to the fact it fell a little in the middle. I'd do a 35-45 minute second rise instead of the hour the recipe calls for. Did 1/2 cup milled flaxseed and only 1 1/2 cup (Bread) flour. Fantastic flavor! Will be great with tonights soup!

Butternut Squash with Onions and Pecans

The in-laws had me find/print this recipe for them and the Thanksgiving crowd LOVED it! My father in law mentioned that he wouldn't want to cut the squash for a living, but the end result was a huge hit, even for the "picky" eaters!

Morning Glory Muffins I

Made a HUGE batch of these because they are fantastic for my on-the-go kids. Halved the sugar and substituted half the oil with applesauce. My kids are eating carrots and they don't even know it! I used my food processor to keep the texture to a minimum.

Ranch Hamburger Buns

These turned out fantastic! I added 1/2 cup milled flaxseed in place of that much flour, then added 2-3 t. Wheat Gluten to bring up the rise. Sprinkled with Sesame seeds and the buns looked like something I'd purchased at a specialty bread store! After forming buns, flash froze part of the dough before the second rise to pull out fresh for a later use. (Google- freezing bread dough for more info on this procedure)

Three Cheese Garlic Scalloped Potatoes

I had to do some tweaking on this recipe. By the time I went to prepare it on Christmas day I realized we didn't have Heavy Cream. I substituted a can of Cream of Brocoli & milk to equal what I needed. -(doubled the recipe). My only complaint is that the recipe only calls for an hour cook time & so that's all I planned for. My family was kind to eat some, but it was crunchy instead of creamy. I'd recommend having at least 1 hour 45 minutes to cook these potatoes. After I re-cooked this recipe it was AWESOME with left over ham. *** (just cook it longer than recommended!)
