Very good recipe! I modified a bit for a low sodium option. I started by put frozen chicken tenderloins on the bottom of the crock pot. The tomatoes were diced canned (no salt), no broth, 2 cups water with no salt chicken bullion, only had a half package of frozen corn & a can of (no-salt) chili beans. Chopped up some fresh spinach, put on bottom of bowl, poured soup over making sure to get one chicken tenderloin for each bowl. Garnish with a dab of sour cream, reduced fat shredded cheddar cheese & crushed reduced fat tortilla chips.
