Orange Pumpkin Loaf

AMAZING! Giving it 5 stars because it was so tasty, I used fresh pumpkin puree that I had on hand in the freezer for this, delicious! The only thing I might possibly change is cutting it down to a half of an orange. as the taste of the orange was a little overpowering. Maybe I would not include the entire peel and rind of it, just the orange slices themselves. I used sunflower seeds instead of nuts, mmmm mmmmmmmm good! Thanks for the great recipe. :)

Fluffy Canadian Pancakes

These were pretty good. I only used 1 egg yolk like some people recommended, and they didn't taste like egg at all. I also added a tablespoon of sugar. Next time I will add some vanilla extract. I made them for my bf for breakfast this morning, and he had 2 helpings, so they have to be pretty good! LOL Thanks for the recipe. :)

Strawberry Trifle

Made this for Mother's Day for my mom, she loved it! I used only strawberries (by request from her) and real whipped cream. I made my own angel food cake 3 days before to let it sit for a couple of days (it turns out much better if the cake isn't fresh, it doesn't go soggy when in the trifle!) then made the trifle the day of. Was delish! My parents requested that I make this now for every occasion. Thanks for the great recipe! :)

Fresh Asparagus Soup

Delicious! Followed it exactly, and it turned out so yummy. Instead of just using the tops for garnish, I chopped them in thirds and threw them into the soup. It needed to be thickened up a bit at the end, so I added some cornstarch and water. I will DEFINATELY make this soup again and again. :)

Broccoli and Provolone Quiche

I'm giving this 3 stars, but it is probably because I didn't have some of the ingredients and tried to sub them. I didn't have any heavy cream, so I used a substitute of butter and milk (I found the substitution online) - this made it very greasy on the top - however I put about 1/2 c seasoned bread crumbs sprinkled on top to soak it up and that turned out yummy! I didn't have a pie crust, so just put the egg mixture right into the pan (this is lower fat anyways and I like my quiches without the crust). I also had no provolone cheese so used medium cheddar instead, and I mixed half in with the egg mixture and sprinkled the rest on top. I followed everything else in the recipe. Next time I make it, I will prob go buy heavy cream and try it with that. Overall, it was pretty good, just very wet. ****If you want to make it lower fat, cut the crust out of the recipe and top it with seasoned bread crumbs (I used garlic powder and Italian seasoning - it's really yummy and crispy!)****

Best Ever Chocolate Chip Cookies III

This recipe was ok. I halfed the recipe and followed it exactly as written minus the white chips and nuts (didn't have any). The dough was pretty bland, definately needed more sugar. They were alright, but sadly did not live up to the name of Best Ever. Prob will try them again tho, because I'm sure with a bit of tweaking, they will be much better.

Easy Slow Cooker Meatballs

Awesome! I used a mix of ground pork and venison instead of beef, and added about 1/2 c parmesean cheese to the meat mixture. I only had one jar of pasta sauce on hand (Roasted Red Pepper & Tomato sauce) and I used a can of Aylmer Accents - Diced Tomatoes with Olive Oil. I also followed the advice of others and decreased the amount of bread crumbs. They were absolutely amazing! I will NEVER buy store bought meatballs again EVER. Thanks for the recipe! :)

Mexican Rice III

Delish! Made this a few weeks ago with salsa baked chicken breasts and again tonight with tacos. I made a couple of changes: no jalapeno pepper or the crumbled boullion cube, and instead of a chopped tomato I used half a can of Aylmer Accents - Diced Tomatoes with Spicy Red Pepper. It added just enough heat to it, absolutely delicious! I will be making this every time we have mexican food, which is going to be more often so I can make this rice a alot! Thanks for the new staple rice recipe. :)

Glazed Meatloaf II

Mmmmmmm....this was the BEST meatloaf I have ever had. I didn't follow the recipe exactly, here's the changes I made to mine: followed other reviewers and split the amount of lemon juice with balsamic vinegar, added a lot of garlic powder to the meat mixture (we really love garlic at our house), a splash of Worcestershire sauce, diced up some red peppers for colour and flavour, dried parsley and a little bit of chili sauce (the sweet kind). I also doubled the sauce because I like my meatloaf saucy! This was amazing, and I will be making it my staple meatloaf recipe from now on. Thanks for the awesome recipe! :D

Chewy Coconut Cookies

Awesome cookies! (if you love coconut) The only thing I changed was adding a little bit more vanilla extract, and adding a splash of coconut extract. These were yummy cookies, I will definately make them again! Thanks for the great recipe. :D *****Update: made these today; pressed my thumb in the middle of them and put raspberry jam in it before baking! Kind of gooey on the bottom of the cookies, but sooooooooooo good!! Try it, just don't put too much jam or it doesn't bake that well.*****

Easy Apple Cinnamon Muffins

These were pretty good. I followed the modifications made by "canuwrite", and they turned out great! One apple was definately enough, and the crumble mix for on top was yummy with less butter.It made 9 regular sized muffins for me. I think next time I make them I will add more cinnamon and use apple sauce instead of oil for less fat. Thanks for the good basic recipe, you really can tweak it to what you like. They are yum! *****UPDATE**** Made these again last night, but substituted half of the oil with unsweetened applesauce. This reduces the amount of fat in the muffins, and they seemed to be more moist and fluffy. Delicious!!

Old Fashioned Coconut Cream Pie

OH MY GOD. This pie was amazing. I did what other reviewers suggested and did 1.5 c of coconut milk and 1.5 c of half & half cream. Kept everything else the same. I agree with making your own whipped cream if you are going to make this pie; if you're going to do something homemade like this, you gotta go all the way and make your own whipped cream. Made it for my dad's birthday, and he said that I have a job now every year until he dies - cooking these pies for his birthday! LOL Seriously, it was absolutely RIDICULOUS how good it was. It made too much filling, so I had a nice little cup of filling and whipped cream for desert an hour or so after I made the pie. Yum yum! :D Thanks for this sweet recipe!

Really Basic Peanut Butter Cookies

So I was very skeptical about trying this recipe because of it only having 3 ingredients....so glad I tried it! I halfed the recipe because I only wanted to try it out - added a pinch of baking soda and a splash of vanilla extract. I also split the sugar into white and brown sugar, equal parts of each. I crushed some peanuts and added them to the dough as well. My bf LOVED them, and told me that I had better only make these ones from now on. LOL Thanks for the sweet recipe! :)

Pumpkin Cheesecake I

So this was my first time ever making a cheesecake....made it for Valentine's day for my bf who loves pumpkin cheesecake. He thought it was amazing! The only thing I would change is maybe next time add a little more creamcheese to it....I topped it off with warm caramel sauce, awesome!!!

The Best Meatloaf

Pretty good recipe.....I made it with a mix of ground pork and venison, and it turned out very good. Gave some to my dad, he really liked it alot. I put alot more sauce on top because I like my meatloaf with lots of sauce. Overall, pretty darn good. :)

Home-Style Scalloped Potatoes

Pretty good recipe, I found it a tiny bit bland so I made them again and made some changes: parboiled the potatoes first so it didn't have to bake as long, and added about a tsp. of minced garlic to the water; I also added about a pinch of dried dill and parsley to the sauce; while frying the onions, added some more garlic to them aswell. The last 10 minutes or so of baking, added some shredded medium cheddar cheese to the top of the potatoes.....DELICIOUS! Will definately make again, with my modifications. Thanks!

Emily's Famous Apple Pie

This was my first time baking a homemade pie, and it turned out pretty darn good! I followed the directions pretty closely, but also made a few changes that other reviewers recommended: I rinsed the sliced apples with water to make them wet, then tossed them in the dry mixture which turned into a gooey,soft mixture; added 1/4 tsp. of vanilla extract to the filling; did the 1/3 c. of brown and 1/3 c. white sugar mix; 1/4 tsp. of nutmeg instead of the cloves; added a little bit more sugar and cinnamon because I like my pies sweet. I used the Pilsbury crusts because I was scared to make my own since I am pretty new at baking LOL Also brushed the top of the pie with an egg wash....it turned out pretty amazing, my bf loved it! The filling was a little thick, but I think it's because I had a slight accident with the flour. LOL Definately will make again, thanks for the awesome, easy recipe!

Roasted Lemon Herb Chicken

This turned out awesome! I took other member reviews into consideration when making this and here are the changes I made: cut up a whole onion and placed it inside the chicken, as well as one of the lemons after I used the juice, 4 cloves of fresh garlic. I covered the chicken with a lid for about 1 1/2 hr of the cooking time, than took it off for the last 30 mins (it took 2 hours to cook the chicken) so the skin ended up crispy. I also rubbed the mixture under the skin and added dried rosemary to it as well before cooking. I basted the chicken every 30 mins or so. Had it with scalloped potatoes from this site as well, AMAZING dinner! Thanks for the sweet sweet chicken recipe, I am making it again this Sunday! :D

Apple Crisp III

I was skeptical in trying this as I am so used to homemade apple crisp with the oats topping. I'm glad I did, it's delicious! I drizzled honey over the apples, as well as put about 1/2 tsp of vanilla extract in the topping. I also sprinkled some cinnamon in the topping as well. The reason I am giving this 4 stars is because it was really runny; next time I make this I will only put about half the amount of water, if any at all. I will definately make this again! Thanks for awesome recipe! :)

Baked French Fries II

Made these a few times now, and decided I should finally review them! These were really good! Made them again yesterday, but didn't have any cooking spray on hand, so I tossed them extra virgin olive oil instead. Tried them with Italian Seasoning this time instead, and fresh grated parmesan cheese - tossed them all together in a bowl then baked them. Turned out fantastic! Thanks for the no fail recipe. Will make these again and again. :)
