I am a Culinary Arts grad who worked for a major restaurant concern for several years before having to take an early retirement.
My favorite things to cook
I have always like to work in a research kitchen developing new and exciting recipes but most of all, I like cooking within the Mexican and Seafood genres. I really do not have one single favorite dish that I prepare but grilling beef, pork tenderloin, seafood, chicken and fish in many different ways are the closest to being favorites.

Southern, Italian and Mexican.
My cooking triumphs
I have developed literally hundreds of menu items for my previous employer before having to retire. Many of the recipes I developed for them were eventually placed on the menu and some remain there today.
My cooking tragedies
When you "experiment" with new items it is a given that there will be catastrophies and believe me I have had more than a few. The good thing about that though is the fact that you should be learning something from all of the mistakes that you make. So, there is a bright side even to the mistakes that you make. There are no great sucesses without several dismal failures!
