Sweet Potato Casserole VII
These were incredible!! Ever since going to Outback and having the mashed sweet potatos that taste almost like a dessert, I've wanted to re-create them at home. This was every bit as good!! I doubled the vanilla, and added a little extra sugar because I had more than 3 cups of sweet potatoes. My kids had 3 helpings!!! The crunchy toasted coconut topping was simply wonderful.

Salsa Guacamole
This guacamole is excellent! I had no idea how quick and easy it is to make. I originally made half the recipe, and my kids gobbled it up and asked for more. We enjoyed it all summer!

Sunshine Chicken
This is a good and easy weeknight recipe. I used skinless thighs, 1/2 ketchup and 1/2 bbq sauce, and substituted honey for the corn syrup. Also used a big zipper bag to marinate the chicken in the sauce for a little while before baking. This is also a quick way to get the sauce distributed all over the chicken. While baking, make sure to drain the fat each time you baste - the sauce sticks to the chicken much better without all that fat. My family really enjoyed this. For next time, they requested a buffalo-style version of this recipe. I'll have to experiment with adding Frank's RedHot sauce...
