Prego(R) Porcupine Meatballs
I have NEVER rated a recipe this low. I honestly can't say what it would have tasted like had it worked out. I followed to a T the directions to make the meat "balls". The mixture was a mushy mess that would NOT hold the shape of a ball AT ALL. I tried to salvage it by making meat patties only to be extremely underwhelmed with the "flavor". I added some garlic salt and worcestire sauce to add more flavor and it was edible but more a rice patty than a meat patty. I couldn't bring myself to waste a perfectly good jar of sauce along with what use to be perfectly good ground turkey and rice.

Chile Rice Casserole
I made it a little differently, doubled the recipe and used 3 c cooked rice. I cooked rice until water was absorbed - leaving rice slightly undercooked. Mixed rice with 1 can cr. celery, 1 can cr. chicken (it's what I had on hand), 16 oz sour cream, 7 oz can green chilis, 1 tsp ground cumin, 1/2 tsp garlic powder, and 1/2 tsp garlic salt. The whole family ate it up, even my 17 month old! Thanks for sharing!

Spinach Enchiladas Verde
Delicious! My 10 y/o loves the spinach enchiladas at a local Mexican restaurant and asked for these as his birthday dinner. I made very few changes. We doubled the salsa/sour cream, used floured tortillas, and added some ground cumin to the salsa/sour cream mix. We paired it with the Spanish Rice II recipe from this site and the entire meal was just wonderful. He's already asked for it again! Thanks for sharing!
