White Chocolate Raspberry Cheesecake
So, this was my second attempt at homemade cheesecake (the first time was a complete disaster!) and it turned out marvelous! I used chocolate graham crackers for the crust, melted the white chocolate and cream in the microwave, and like others, I used a seedless raspberry jam which I heated up in the microwave instead of making from scratch. All those changes worked wonderfully...they saved me from extra work and extra dirty dishes. I baked it in a springform pan, and instead of setting it IN a water bath, I put a shallow pan of water on the rack right under it. When it was done I cracked the oven door and let it cool in the oven for about three hours, then refrigerated overnight. One tiny little crack appeared but by the time I garnished it with extra raspberry glaze, fresh raspberries, and chocolate shavings, no one was none the wiser. This was for my husband's birthday and was a great alternative to the usual cake. Got TONS of compliments on the professional look and taste, and with me, compliments are ALWAYS welcome;)

Sauceless Garden Lasagna
Oh my gosh! I am not the biggest fan of lasagna, so this was my first attempt at making one. I am a total cheesehead so of course I used more than called for: 1 whole cup of feta and 2 cups mozzerella. I still used all the tomatoes, but with each layer I added a thin layer of tomato and basil pasta sauce...yum! The nearby grocery store was out of fresh basil so I used dried, although I'm sure it would be much better with fresh...that is a must next time. To cut down on the juices in the dish, I sauteed my spinach and squeezed out the liquid. I also used regular lasagna noodles instead of the no cook type. There was no way I was going to fit this all into a 9x9 dish, and a 9x13 did the trick. Also, for the people that are wary of balsamic vinegar, DON'T BE! It's not overpowering at all and is a nice complement to the other flavors in the dish. This is most definitly a keeper and I am so glad I tried it:) Thanks for a delicious recipe!

Paprika Chicken with Mushrooms
This was a great Sunday night dinner. Following some other suggestions, I added about a half cup of white wine, some half and half, and a pinch of flour, resulting a creamy, delicious sauce. I didn't have any fresh mushrooms, so I used the kind in the jar since it was what I had on hand. I'm always looking for different chicken recipes and this one is most definitly a keeper!
