Healthy and Delicious Cherry Pie

Reviewed: Jul. 9, 2009
It’s a very good recipe and just what I needed to use up my cherries before they went bad. It’s easy to make and has a nice flavor, the hardest part is getting the cherries ready. Because of the reviews I did precook the crust a little and I also added 2 tablespoons of flour to my cherries and sugar to keep it from being to watery….worked out well. Thanks Annie!

Easy, Cheesy Zucchini Bake

Reviewed: Sep. 12, 2008
My family liked this recipe even if they are not fans of zucchini however I did make some changes because of the reviews. Here are the changes I’ve made……I sautéed onions, garlic and fresh mushrooms in a little bit of olive oil then added my ground turkey, salt and pepper and browned my turkey. After my turkey was browned I added my pasta sauce and some Italian seasoning I also added my zucchini to the sauce and mixed together. Because my family is not fans of zucchini what I did is I shredded the zucchini which once mixed in with the sauce and ground turkey you can hardly tell it’s in there and it also cooked much better then sliced or cut length wise. I topped my casserole with a bit of parmesan and light cheddar cheese and baked uncovered at 350 for about 25 minutes. I served it over broad egg noodles…..next time I will add a bit more spices because it’s still missing a bit but over all very good and healthy.

We loved this Macaroni Salad however I did follow the advice of other reviews and only added 1/4 cup sugar and in my opinion it was plenty sweet I may even cut down even I little more on the sugar next time and there will be a next time.

Very good recipe, I used thighs and added oregano for a little more flavor because some reviews said that it was a little bland.

Sweet and Sour Meatballs II

Reviewed: Sep. 13, 2006
We thought these were superb. However, I did cheat, I used store bought meatballs because I was pressed for time and that I did not have any of my homemade frozen meatballs left. I always make a bunch cook them in the oven then freeze theme in individual meal servings. All I have to do is make the sauce and that takes just a few minutes. We really liked the flavor of the sauce and there was plenty of it to pour over rice. Thanks Cathy.

Chocolate Zucchini Bread I

Reviewed: Sep. 8, 2006
Nice bread. My husband had no idea it was zucchini bread, when I told him he was like ‘NO WAY’ I don’t know if that’s good or bad, either way it’s very good bread. Reading the reviews is very helpful because I had no unsweetened chocolate at home and I searched the reviews if someone had used something other then that, and I finally found people who used cocoa. Turned out great, 3 tablespoon of cocoa and 1 tablespoon of butter per square.

Beer Butt Chicken

I’ve made this chicken quite a few times over the summer and we love it. I have tried several seasoning on it like poultry seasoning, sage, savory, paprika but our favorite is BBQ chicken seasoning. I always put an onion in the cavity of chicken and lots of chopped garlic in the beer can.

Bean Quesadillas

Reviewed: Sep. 1, 2006
I tried this recipe because of a meal idea posted by Melissa it’s called Easy meatless Mexican night. We loved it, it’s soooooo good. I must confess I did put a bit of chicken in mine; I cooked my chicken breast with a bit of taco seasoning mix. We had with these superb Quesadillas the Spicy Mexican Salad that was in Melissa’s meal idea. What a wonderful supper we had. Thank you Jennifer Orriss for the Superb Quesadillas.

Spicy Mexican Salad

Reviewed: Sep. 1, 2006
Loved it, loved it. We used Ranch because that’s the kind we like and a reviewer said it was good with Ranch. We put the sauce on our individual plates so we all could choose, as little or as much, as we want. The same with the corn chips. I will be bringing this salad for lunch often now; I will put the dressing and chips in different containers and toss when I’m ready for lunch.Oh ya forgot to tell you it's not spicy.
