Quick and Easy Chicken Spaghetti

My 10 year old just loves chicken spaghetti and this recipe is great! I added some milk to mine because the cheese can get thick. It's even better the next day!

This was very easy. I didn't have any salsa on hand, so I diced a Roma tomato and some onion. The hot sauce added an extra kick and was great!

Owen's Mozzarella And Tomato Salad

This is a great Summer dish. I took it to a pot luck at work and they all thought it was great. One co-worker even said she was "moving in" because I always bring "fancy things." Uh, ok? I never thought this salad as being fancy, but I guess it's all about presentation. I used olive oil that already had basil in it, so it was very easy. I think Roma tomatoes are just the right size for this dish.

Erica's Delicious Slow Cooker Beef Roast

This is one of my most favorite recipes! It is so very good and DH loves it. I add potatoes to mine and a can of beef broth. I saute the garlic in the oil used to brown the roast and then add the broth and the cream of mushroom soup. It is a family favorite!

Poor Man's Hamburger Steaks

Crackers instead of bread crumbs? That is genius!! I don't know why I didn't think of it before. My family really enjoyed this and my picky 11 yr old son even asked for more! I added one egg to the meat mixture and after I formed the patties, I dusted each with flour. I used 2 cans of cream of mushroom soup, mixed it with evaporated milk and poured over each patty. They were delicious! Served it with a salad, mashed potatoes and ranch style beans.

Seven Layer Dip I

I made this for an office pot luck and everyone ranted and raved over it. They scraped the dish clean and I had to email the recipe to many co-workers. I did make my own guacamole using 5 avacados and a dash of lemon juice. I also left out the salsa. I think the secret is to use taco seasoning and mix with the sour cream. I heated the refried beans and added a few dashes of Louisiana hot sauce. Excellent and I will make again.

Herb, Garlic and Bacon Pork Loin

My mom and I made this on New Years Day and served it with Green Bean Casserole, Broccoli Rice Casserole and Black-Eyed Peas (of course, for New Year's) (We made up several Green Bean Casseroles and Brocolli Rice Casseroles for the holidays and froze them for just such occassions) We dusted the outside of the roast with flour and seared it before placing it in a pot with onions, garlic and spices. We also used Hungarian Paprika to give it an extra kick! It was wonderful!
