Christmas Breakfast Sausage Casserole
Very good basic recipe. I have made this 3 times so far, once as is, once with shredded potatoes (I should have added extra salt with all those potatoes and maybe pre-cooked them a little) and once with par-boiled diced potatoes. My husband has liked all 3 versions. I like the version with 2 medium sized diced par-boiled potatoes, swiss cheese (instead of cheddar) and 1 extra egg and 1/2 cup extra milk. This is a great recipe for company. I was able to make ahead and just pop in the oven when I woke up. It is also very filling, especially with potatoes and easy on the wallet (and I usually have all those ingredients already in my house, so I don't even have to go to the store). I usually just serve with a fruit salad on the side. Very good!
