Delicious Ham and Potato Soup
I subbed cauliflower for the potato, and left the flour/butter out (pureed the cauliflower/onions/celery for texture) then added cubed ham, carrots, celery. Skipped the milk, finished w grated cheddar and chopped chives -yummy, but starch free for my husband's crazy arthritis control diet. Hard to be yummy and starch free, so thanks for the starting point!

Cranberry Pistachio Biscotti
I love this recipe!! My regular recipe "Cantucci Biscotti," on this site has no added fat but are almost too crispy. I like that this is more cookie-like in texture while still having only healthy fats. I can taste the olive oil, and was pleasantly surprised by how much I enjoyed that! I eliminated the almond extract, adding more vanilla, used pine nuts along with the others, and used whole wheat flour.

Tasty Lentil Tacos
YUMMY!! I used a can of lentils, drained and rinsed, and simmered them with about 3/4 c beef broth. The recipe was really good, my only other adjustment was to add a sprinkle of chipotle chili pepper (my new favourite addition to almost everything!!) I served this alongside the traditional beef for tacos, we decided that our favourite was a scoop of each (even better that way than the beef alone!) This will accompany our beef filling (maybe even try mixing it in the same pan and cooking it together??) everytime we have tacos. Thanks for another great recipe!!
