Enchiladas

I've always thought of enchiladas as being made with corn tortillas so that's what I did. I'm glad that I took the advice of others and added an envelope of taco seasoning otherwise this would've been low on flavour. Next time I would use a spicier taco seasoning and spicier enchilada sauce as it was still a bit bland for my liking. I had also added WAY more garlic powder than the 1/8 tsp garlic salt suggested here.

Garlicky Baked Butternut Squash

This was really good. I added a bit of extra garlic (just my taste). Caught my husband going for seconds despite his claim to not be all that fond of squash!

Pesto Pizza

Fantastic! Didn't change the ingredients at all but was just generous with the pesto sauce. SO easy to make! I chopped up all the ingredients and my 2 year old loved helping me to assemble the pizza...then ate a ton of it! Will make again for sure.

Vegetarian Baked Pasta

This was really good and easy to make! I added about 4 cloves of garlic and was very generous with the spices. I also threw in some red chili flakes. Didn't have quite enough portobello mushroom so threw in some cremini mushrooms to make up the difference and it was really good.

Missy's Candied Walnut Gorgonzola Salad

This was great - especially the candied walnuts! I used slightly less gorgonzola (maybe 3/4 of what was suggested) as my husband isn't a fan of it but even he suggested a 5 star rating! So easy and I loved that the dressing wasn't an excessive amount!

Shrimp and Crab Enchiladas

This was quite good. I incorporated suggestions from many of the other reviewers. I sauted uncooked shrimp with a generous amount of garlic and a couple of leeks. I added about a 1/4 cup of cream cheese and some pepper to the mixture. I put a bit of the sauce in the pan first to prevent sticking (although it did still stick somewhat). For the last 15 minutes of baking I also threw some shredded cheddar on top and then broiled for a minute or so at the end. The biggest change was that I could only find red enchilada sauce and it was still good but I can see that the green sauce may be the key. I also generously filled 6 large flour tortillas and it filled my 9X13 ceramic dish nicely. I found that with the amount of crab in this recipe I got a nice crab flavour and didn't need more. I also used the amount of sauce listed and it was fine...not too soggy. Found I didn't need near the amounts of sour cream or green onions listed. Thanks for the recipe and all the other suggestions too!

Cashew Chicken Casserole

Followed the recipe pretty closely (used a bit of ground chicken as I didn't have quite enough cooked cubed chicken). I thought it was quite tasty and so did my company. A little runny but that's not a big deal and could be because I used some ground chicken. Love that you pre-make it and just have to stick it in the oven when hectic dinner time comes around!

KELLOGG'S® RICE KRISPIES TREATS® Monsters

Super easy and got lots of compliments on my 'hard work'. Did need a great deal of icing to coat the uneven surface of the squares which is only a problem since I bought ready-to-use icing in a tube which is a bit more expensive.

Roasted Red Onions Stuffed With Mascarpone Cheese

This had potential but didn't turn out well for me. The onions were very raw and basically inedible despite extending the cooking time substantially. I altered the filling at the suggestion of another reviewer by adding extra herbs such as basil, chives and extra thyme and garlic. When I filled the onions I had space leftover so I added some feta that I had on hand. The filling was actually quite good this way had the onions been cooked thoroughly. So...the recipe has potential but you may need to deviate somewhat.

Pumpkin Burgers

This was a great recipe. I didn't have pumpkin pie spice so used 1/2tsp each of allspice, nutmeg and cinnamon. I also took the advice of another reviewer and added some garlic powder. Found it had loads of flavour! And what a great way to hide some extra vitamins from the picky eaters!

Cherry Cheesecake

Well, I've got to give this 5 stars as it was SO easy to make and my guest requested the recipe more than a week later saying he "couldn't get it out of his mind"! I followed the recipe exactly and didn't have trouble with the consistency of the cheesecake.

Mom's 'Sweet 'n' Sours' Pork Ribs

Really great sauce! I followed the procedure exactly and the ribs turned out really well. I changed the ingredients just a bit. I doubled the garlic and also added pineapple chunks as was suggested by another reviewer. Was great over brown rice!

Sweet Russian Cabbage Soup

Wow. This is a great soup. My husband, who is usually a more harsh critic, said he'd like to make it again and rated it 4 stars (rare for him to offer more than a 3). I think I'd try the suggestion of another rater next time and half the sugar and increase the vinegar although it is very good this way too. Also, I used fresh tomatoes from the garden rather than the canned and doubled the garlic.

Orange Herb Roasted Chicken

I really liked the flavour in this recipe! I was quite generous with all seasonings and it was really tasty. I took the advice of another rater and rubbed the herbs under the skin with the butter. Served it with the allrecipes.com recipe 'Broccoli in Roast Chicken Drippings' and wild rice and it was great! Will make it again for sure.

Broccoli in Roast Chicken Drippings

A good way to cook broccoli. Very easy and practical. I wish allrecipes.com had half-star ratings so my husband and I could split the difference. He gave it a lower rating (3 stars) as it is a bit fatty cooked in the chicken drippings. I would've given it 4 stars but I gave in to his rating. I took the advice of another rater and left the broccoli in the oven longer (about 15 minutes or so) and that was great.

Minted Salmon
