I LOVE to cook, and my fiance LOVES my cooking, so we're a match made in heaven! I recently moved down to Louisiana and have begun the process of perfecting a southern roux - and I've learned that this is not something to be taken lightly!
My favorite things to cook
I would say that I love to prepare Thai dishes. There's not really any options down here when it comes to Thai food, so I've learned to fend for myself. My fiance gave me a wonderful Thai cookbook for Christmas this year and we've had a lot of fun learning new techniques and making some great food!
My favorite family cooking traditions
My favorite cooking tradition is when my mother and I will make Yorkshire pudding - it's always fun to see just how high it will rise and if it does, whether or not it will stay that way!
My cooking triumphs
When we found out that we were moving to Louisiana from Chicago I decided to try my hand at some Cajun foods. Well, after a lot of trial and error I came up with a recipe for Jambalaya that my entire family just went nuts over, but none of them are actually from Louisiana so I was a bit nervous as to what an actual Cajun might think of it. One night I made it for dinner and my fiance decided that he was going to take some to work the next day and ask his boss - a true Cajun from Bayou Country - to give it a shot and offer up some constructive criticism. His exact words were "Good girl! You didn't put chicken in it - that's the mistake all you Yankees make!" He then proceeded to tell me that it was the best Jambalaya he'd ever had, and that unless I wanted him eaten by a gator I'd best keep my mouth shut around his wife!

I've actually burned water. Believe me, it CAN be done!!!!!!!!!!!!!!

Maple Salmon
Wow! This recipe is truly great for the colder months! I only made one minor change, and that was to omit the garlic salt and instead use two cloves of fresh garlic. I may try adding some fresh ginger in the future as other users have mentioned, but it turned out to be a wonderful dish last night "as is". I served it over some brown basmati rice and topped it with the remaining sauce, along with a side of roasted broccoli made simply with fresh garlic, olive oil and a hint of red curry paste. My husband even gave me the "so are you going to have seconds?" look and dove in to finish off what was left in the dish! I will be adding this to my recipe book with pride!

Delicious Ham and Potato Soup
This was a great, hearty soup - and a wonderful way to use those leftovers! I only tweaked the recipe a bit: used half the water and substituted the other half with chicken broth, added a bay leaf and some extra salt. Also had some shredded cheddar and grated parmesan on the side for add ins for anyone who wanted, and that added a lovely flavor to the soup. Thanks for the recipe!

Slow Cooker Chicken Taco Soup
This was awesome! I made a couple of adjustments purely out of what I did and didn't have on hand. Left out the chili beans and the beer, used two packages of McCormick Taco Seasoning and added 2 cloves of minced garlic to the soup. Also used 5 breasts as opposed to 3 and it can be eaten as a thick stew or even rolled up in flour tortillas! I served it with the above extras as well as some fresh avocado and lime - this is a big hit in my house and everyone who tries it wants the recipe!
