Chocolate Truffle Cookies

Can you say YUM?! If you like chocolate you will love these. It is very important not to over-bake. I would cook for 9 min and then let rest on the pan for another 5. I did freeze the batter for a couple of hours. A bit hard to get out of the bowl, but worth it. I used a small cookie scoop. These cookies keep their shape and don't run if you freeze the batter. No need to change the recipe. It's wonderful. The only thing I did on the second batch was add a little salt on top. If you like salt and chocolate this is AMAZING! I will use this recipe again and again.

Tomato-Cream Sauce for Pasta

Wonderful! Family loved it. I used Fresh tomato, half and half and about 1/4 tbs butter. Plus used 1/4 tsp each: seasoning salt, Italian bread seasoning, and dried tomato pesto. I also used fresh basil. Will use again. So easy. I made this and added frozen meatballs before the cream and butter. Once cooked then I added the cream. Second time I sauté one shallot and one onion. After a few minutes I reduced heat and added several whole partly smashed garlic. Cooked for a minute. Then added ingredients as suggested. I only used 1/4 tsp each: seasoning salt, Italian garlic bread seasoning, and dried tomato and garlic pesto seasoning.

Barbecued Asian Flank Steak

Flavor is good. Steak was a little chewy. Maybe a slower cook would be better for this cut. The family enjoyed it.

Baked Ziti I

Very easy to make. Left overs tasted even better! The only changes I made was to add crushed garlic to the onions and beef and low fat sour cream. Next time I will make my own sauce - it always tastes better. I even put some in the freezer for another night.

Spinach Brownies

Pretty good. I used 1-16oz bag of frozen spinach which I cooked in the microwave as per package directions with 3 tbs of butter. I sautéed the chopped onion in 1 tbs of butter then once cooked down I added crushed garlic and cooked for another minute. I did a little extra salt, but it needed more. So next time I will try it with 2 tsp of salt. I think it will be better with different cheese or maybe topped with cheese. I only used 4 tbs of butter and I don't think it needed the whole stick.

Pineapple Cashew Rice

This was so good! I used red onion instead of yellow and shredded carrots instead of diced. Also I ran out of red pepper, so I used a bit of Tabasco. This was amazing. Tasted like something from a restaurant. I will make again.

Marinated Pork Tenderloin

Really Good! I did make some changes based upon other reviews: I used 1 small red onion, finely chopped; 1 shallot finely chopped. I didn't have sherry so I used basalmic vinegar. I also added about 1tsp of crushed garlic in place of the powder. Can you say yum! I only used one tenderloin and marinated it for well over 24 hours. Then I baked it for about 1 hour at 350 degrees. I heated the remaining sauce. Then used a little bit of cornstarch to thicken it. I will make again. Very easy and loved by the family. I made it with Pineapple Cashew Rice and spinach brownies - found on this site.

Awesome Slow Cooker Pot Roast

Good - not over the top flavor. I did not use the onion soup mix - I don't use products with MSG, so I used an onion spice from pampered chef. I did make it with beef broth as well and beef stew meat. No need for anything expensive as this is in the crockpot and will be very tender.

BBQ Pork for Sandwiches

Very good. Will make again. I cooked it in the crockpot for 10 hours. Then I drained the broth and added jack daniels bbq sauce. Let it set over night in fridge and cooked it for 4 hours on low. Yum.

All American Roast Beef

Very good. I added 1/3 C soy sauce and 1/3 C worcestershire sauce and water and cooked it in the crock pot for 5 hours. Next time I will get it out in 4 hours. It was very tasty.

Janet's Rich Banana Bread

YUM! The best banana bread I've ever made! My husband was impressed with the moist bread. I made two batches. One for my son's school - mini-muffins it made 60 mini muffins. I cooked them at 350 for 12 min. After we sampled a few I knew I needed to make more for the house. So I made 6 large rose cakes with another batch. I did make some alterations per other reviewers. I did not melt the butter. I used room temperature butter and creamed it with the sugar. Then I added 1 tsp of lemon juice with the vanilla. I'm not sure that I noticed the flavor, so maybe I'll add a bit more next time. Finally I added 1 3/4 cups of flour. It really was perfect. This will be my go to recipe! I have been making this recipe for a long time now. This time I changed it up some more by adding juice of 1/2 a lemon, exchanging the butter with equal amounts of applesauce and 1 and 3/4 C whole wheat flour (always use whole wheat).

Artichoke Spinach Lasagna

Amazing flavor. I didn't have fresh rosemary, so I used dried. I also didn't have marinated artichokes, so I made my own. (See below for recipe.) Well worth the extra step. Used chicken broth and no-boil noodles. (Can't wait for my husband to try this.) 1 bag of Frozen artichoke hearts prepared according to the package directions 1 cup each wine vinegar and olive oil (*virgin, not extra virgin) 4 cloves fresh garlic, minced 3 tablespoons minced fresh Italian parsley Mix together wine vinegar, oil, garlic powder and parsley. Add artichokes. Stir, cover and refrigerate. Better on the second day. Will keep several weeks in the refrigerator; stir occasionally. Makes 24 whole chokes. *Extra virgin olive oil may become too dominate in flavor so virgin olive oil is preferred.
