Eastern Rice Salad

Yummy, my guests loved it. I used brown rice instead of white, ommitted the spinach and added chopped carrot. For the dressing, I used my standby Oriental dressing recipe from the "Oriental Cold Noodle Salad" recipe on this site (adding in 2 TBS of chopped fresh ginger) Excellent, Healthy and really tasty!

Sweet Vidalia Onion Pie

I made the onion filling and half-and-half/egg mixture as directed, but added a shot of Worcestershire Sauce and some paprika to the liquid and a lot of love to the preparation. I did not put it in a cracker crust, instead I layered the onions, and about a cup of swiss cheese in a casserole pan (I made three layers). Topped it with the crushed ritz crackers/ Turned out YUMMY and house smelled so good while it was cooking.

Classic Peanut Butter Cookies

Made these for my BF and they turned out the perfect consistency and crispiness level. I added 1/2t of Vanilla and next time I will increase the peanut butter a bit.....

Crumb-Topped Rhubarb

This turned out delicious. I increased the rhubarb (I used fresh) by 1 cup; cut down the sugar to 1/3 cup; add juice of one lemon to rhubarb mixture. The crumb topping was great, although I think I will add almonds to this next time. Great recipe, super easy, wonderful with ice cream. I will make this again!

Simple Cauliflower Soup

Mmm mmmm good! I pureed everything and added cheddar cheese at the end. Looked long and hard before settling on this recipe, and am glad I did because it turned out great!

Mom's Zucchini Pie

Yummy! I added 2 tablespoon of chopped Pimento to the zucchini mixture, and mixed in 1 T of Dijon Mustard into egg mixture. Came Out Wonderful - Just like my mom used to make!!

Bread Pudding II

Yummy! Fluffy & Light. I made mine with leftover Hawaiian Sweet Bread dinner rolls, and used all 4 eggs. I whipped up the eggs & milk mixture until it was FROTHY and then let the bread soak in the mixture for a good 2 hours. When I baked it it PUFFED UP really nicely, and was crispy on the outside and wonderfully creamy on the inside. A WINNER!

Tangy Buttermilk Cheese Bread

Tangy, love how the cheese flavor really comes through on the crust! Makes excellent toast, accompanied by sweet tea! I had to add a little extra buttermilk to get dough to hold together, but baked up beautiful in the oven and the smell is HEAVENLY! Enjoy!

Black Bean Vegetable Soup

Yummy! I read the reviews, and increased the garlic and spices (we like it spicy here in California), added a diced red pepper, a big pinch of salt and sugar, and finished it with a squeeze of lime juice. Also, try adding some bottled salsa to the tomatoes before you puree them with the can of beans. Excellent -- this one is a keeper.

Corn Casserole I

This turned out very nice! I substituted fresh chopped seranno chile for the canned chiles and used green onions. I baked it a little longer to crisp up a nice crust. Delicious!
