Amazing Butternut Squash

This was okay, but neither I nor hubby thought it was spectacular. Given the amount of work it was to peel the squash, I don't think I'll be making this again.

Pasta Lamb Skillet

This was a great meal! I didn't have all the veggies on hand, so I made some changes, but I love the fact that you can use just about anything in this meal. I didn't have zucchini, so I used a red bell pepper, and I also used a leek about to go bad rather than an onion. I subbed in sun dried tomatoes rather than fresh or diced and it added a wonderful flavor when I poured in the olive oil that they came packaged in. I cubed leftover leg of lamb from Easter dinner, and I suggest that anyone doing so add the lamb pretty much at the last minute, because left on heat for too long it will get dry and chewy. We'll certainly be making this again!

Kielbasa Bean Soup

Wow! This was a wonderful soup. I used a can of Mexican style chili beans for additional flavor and thickness, and it turned out beautifully. Hubby raved over it, and this is certainly a keeper!

Buttery Herb Wine Sauce

We didn't enjoy this one at all. The sauce was watery and didn't thicken (even after sitting for about 5 min.) into the texture I expected. It was also very bland, and I added more than double seasonings.

Tuna Noodle Casserole from Scratch

This was a great casserole! I was surprised at how easy it was to make from scratch. One suggestion is to sautee the mushrooms in the butter first before adding celery & onions. They'll absorb some butter and taste wonderful. Hubby & I were both ver impressed and we'll certainly be making this again.

Spaghetti Squash I

This was great, and I love the fact that you can clean out the fridge adding a bit of whatever you have odds and ends of left over. Squash was a little raw near the edges, so I think I'll cook a bit longer next time.

Spaghetti Squash Medley

Excellent! I love the fact that you can use this recpie to *clean out* the fridge by adding pretty much whatever you have. I topped with frech mozarella cheese and then broiled until it was melted. Delicious!

Simple Grilled Lamb Chops

Wow...this was delicious! As a few others mentioned, I was skeptical about the vinegar, just because hubby hates it, but after grilling, we couldn't even taste it. I added the cinnamon and allspice, and I think that did add some nice mild flavor. We'll certainly be using this marinade again & thanks for the recipe...it's the first time we've ever made lamb. ;)

Cheesy Eggplant Bake

I'll confess, I read this recipe and then as an Italian habit, I immediately forgot what I read and started prapering my sauce. DUH! I went back to the repice and then realized there is NO SAUCE! ;) So, I improvised by layering the eggplant, sauce mozarella cheese and then baked according to the directions. It was wonderful! A simpler way to make is to buy frozen pre breaded sliced eggplant (I used Trader Joe's). It came out delicious, and I promise that next time I'll not make sauce in advance and I'll actually follow this recpie, which sounds divine.

Sausage-Stuffed Squash

Wow, what a great recipe! Hubby never had acorn squash before, and he loved this. I used spinach/feta/garlic chicken sausage from Trader Joe's, and I think this would be excellent with any flavored sausage you can find.

Catfish Gumbo

Wow....this was great! I had leeks on hand, so I used those rather than onion, and I also used tilapia rather than catfish. Needed to get rid of the excess, and I think this would work with just about any type of fish.

Shrimp Scampi III

Wow, this was great! I added mushrooms with the garlic and sauteed them so they soaked up the butter and wine. I also used parmesan cheese to thicken rather than the bread crumbs, and it was absolutely delicious! This is a keeper!

Sorry guys, but we didn't do well with this one at all. I cooked it for twice the recommended time, and the rice was still crunchy and was very soupy. The flavors were very good, but we won't be making this again.

Oven Roasted Stuffed Chicken Breasts

Wonderful! I was surprised by the juciness of the chicken...I thought it would surely dry out while baking. I added fresh parm to the tops for the last 5 min., and it was a huge success. A real keeper!

Chicken Chimichangas

Excellent! By the previous reviews, I also decided to bake at 400 for 25 minutes. They came out nice and crispy, and they were a hit for Super Bowl Sunday. This is certainly a keeper!
