Zesty Pita Chips

Delicious!!! I dipped mine in olive oil and then dipped again into the dry herb mixture. Hubby & I both raved! Next time I'll add some parm cheese into the mixture.

Irish Lamb Stew

Wonderful! I used leftover Easter lamb, so I didn't have as much, and I just scaled down the rest of the recipe. Added mint leaves, and the flavor was incredible. Definitely a keeper!

Baked Penne with Italian Sausage

Totally love it! I think I'll cover it next time I put it in the oven to bake, because the top of the pasta dried out. I love the fact that you can add in whatever meat you have so it's an excellent way to redo the leftovers.

Cajun Rice Dish

This was great! I love the fact that I had 3 days worth of leftover meat, and I just made the rice, tossed in the veggies and had a new meal! There are only 2 of us, so next time I'll half the rice, and I'd also recommend a quick sautee for the veggies, as they were still pretty crunchy.

This was a tasty and easy recipe, though my husband and I honestly didn't care for the sweetness of the sauce. If I make this again, I'll most likely just use butter and a small bit of lemon juice rather than the sugary sauce over the chops.

Wonderful! I served over jasmine rice with asparagus on the side. Very oriental, and you can certainly add your favorite fresh veggies into this and just cook until tender. Hubby & I both loved this!

Delicious! The only thing I'll change in the future is that I'll actually go to the trouble to make the honey mustard sauce. We used a store bough this time, and it lacked flavor. The chicken was perfectly juicy and tender.

Easy Creamy Pork Tenderloin

Delicious! I only had a 1 lb. tenderloin, so I cooked for 7 hours. It was on the verge of being dry, so next time I'll cook only 6 hours. I also injected the meat with some roasted red pepper juice, and it was the perfect addition. Added carrots and mushrooms, which worked perfectly.

Deep South Fried Chicken

This was excellent, and my husband told me multiple times how much he loved it. I did brine for 2 hours before cooking, and that did seem to add tenderness and moisture. It didn't crisp up quite as much as I thought it would, although I followed the directions to a tee. Advice on that?

Southern Peach Cobbler

I give this 4 starts because my hubby abolutely loved it. Personally, I didn;t like the sweetness or the tartness of the peaches, but I'll admit this isn't my style at all. I think it would be geat for entertaining, as long as I don't have to eat it!! btw, THE CRUST WAS AWESOME....BTW the crust is incredible....I could eat the crust all day long!
