I am 26 years old, and have a 3 year old daughter. I just got married in March 2008. I work from home as an executive secretary for my stepfather. I love shopping, reading, and of course cooking and baking!
My favorite things to cook
Any italian food, mexican or tex-mex food, quick and easy recipes, and I also love to attempt gourmet and interesting dishes- but I have to be careful because I have a picky eater to feed (my boyfriend). I love putting my personal twist on old favorites- adding things, taking things out...and I'm always creating a new cream sauce. I have a weakness for cream sauce!
My favorite family cooking traditions
I have always loved how my mother and I come together to prepare meals for holidays and parties. I also have always loved how my grandmother always made the same things every holiday (i.e. stuffed shells and easter bread for easter, lasagna for christmas...etc.).
My cooking triumphs
My taco bake, my homemade mac and cheese, my alfredo sauce, and my turkey meat loaf! YUMMY.
My cooking tragedies
Italian honey balls! I should have had my grandmother show me how to make these before moving from NJ! I burned most of them (oil was too hot) and they ended up tasting like doughnuts. I also melted a plastic spoon and stunk up the apartment in the process!

Baked Oatmeal II
I make this exactly as indicated, except substitute sliced apples for the cranberries because my husband prefers apples. It is VERY good and it's a Sunday morning favorite. Thanks to the review suggesting 1/4 cup butter and 1/2 cup applesauce- I was looking for a lower fat version and now I'm going to try it!

Abby's Chicken Rollatini
Eh. That's really all I can say about this. Like everyone else, I was expecting something really spectacular because of the rating. I found it bland, even though the chicken was coated in parmesan cheese. I didn't really like the taste very much, and my cheese kind of oozed out a little bit as well. Won't make this again.

Awesome Slow Cooker Pot Roast
I loved this recipe. I only used about 1/4 to 1/2 cup of water, and one can of cream of mushroom. My roast was about 4 pounds or so. I also used dry onion/mushroom soup mix. I cut up some potatoes and threw in some baby carrots on top. Cooked on low according to directions, and meat came out tender, juicy. Gravy was wonderful. My boyfriend swore up and down he didn't like pot roast, but he is converted. He asked for this one again really soon!
