Hearty Meatball Soup II

We loved this soup, though we used home made stock and fresh veggies. A quick and easy way to make a lot of meatballs quickly is to pat the ground beef into a 1" thick square and then cut that into 1" cubes. They remain square when boiled in the soup, which looks kind of neat, but if you cook them in the oven they shrink up into balls.

Apple Crisp IV

I seemed like too much "crisp" for our tastes, so we cut the recipe in half and just put a nice thick layer over our cinnamon coated Cortland apples. 30 minutes at 375 degrees and it was perfect.

Red Cabbage

A rainy day altered our menu yesterday and instead of using my red cabbage for a slaw I decided to make this. It was a huge hit with my elderly dutch parents. They filled their plates with it and asked to take the leftovers home. I made it with 1/2 the vinegar as others suggested. And I made it in the crockpot, so it was super easy. I'm going to make a big double batch of it to freeze for my folks soon.

Rhubarb Cake I

Turkey Pot Pie I

Finally a pot pie recipe that doesn't need cream soup. I made a few changes to suit what I had at hand, but followed the spirit of the recipe and it was a very good way to use up leftover turkey and vegetables.

Parmesan Potato Soup

I make soup quite often and I think this is the best soup I have ever made. The "herby" flavours were just awesome. I only used 4 cups each of milk and home made chicken broth. My only regret is inviting my daughter to dinner because now there are no leftovers. This is definately a keeper.

Cheddar Bacon Hamburgers

These burgers had the texture I liked, but the cheese all melted out onto the grill and made a mess. We couldn't really taste the bacon either. Thankfully the garlic gave a good flavour, but I felt I wasted a lot of time and ingredients.

Rainbow Rotini Salad

I just made this to go with burgers tonight. I only had whole wheat rotini so that is what I used. All the veggies still add a lot of colour. It is very good, but I bet it is even better after sitting a few hours.

Sweet, Sticky and Spicy Chicken

Whew, this sure is spicy, using Franks Red Hot Sauce. I was only going to give it 4 stars but my husband insisted it was a 5 and wants me to make it again. I doubled the sauce so there was enough to pour over brown rice.

Pork Chop and Cabbage Casserole

Wow, this was unexpectedly good. I didn't expect 5 star results. I didn't have a can of cream soup, but did have some leftover home made cream of broccoli soup that I used. We shredded the cabbage fine, and layered it with thinly sliced potatoes and boneless chops. Yummy! Next time I will leave the foil on for the whole time as the chops were on the verge of drying out.

Best Cream Of Broccoli Soup

Personally, I would have rated this 3 stars as I found it quite bland, but my family ate it all up so I'll compromise with a 4. I did add sharp cheddar to it and that helped give it a little oomph.

It is frustrating to read reviews with so many revisions they may as well be a completely different recipe. We made this as is for a romantic Valentine dinner and it was delicious. We topped our steaks with fried mushrooms and also made "Perfect Baked Potato" and "Asparagus Parmesan" from this site. A lovely bottle of wine and a decadent bakery New York cheesecake made this a perfect high end restaraunt quality dinner.

Breakfast Sausage Bread

I made this for a potluck brunch and everyone really liked it. I used my own whole wheat bread dough and only had mild sausage. The spices were a nice touch. It was a small group so there were leftovers, but it warmed up well.
