Just made these today. They were easy and tasted great. I suggest cutting the recipe in half because it made a pretty large number of muffins. I made it into mini-muffins and baked them for 10-12 minutes. I also added an oatmeal streusel topping but it oozed off onto the pan and made a mess. Either way, they were yummy and I will make them again.

Sooooo good! I added the oatmeal topping as suggested by another reviewer. This was THE BEST zucchini bread I've ever tried. It didn't last long at our house. I am planning on making this one again soon.

I like the idea that this recipe would be easily adaptable to many different vegetables but it didn't work well for us. The flavors just seemed "off."
