Delicious Ham and Potato Soup

Excellent recipe as is, but this time I had to make it "dairy free" for my son. Used unsalted margarine and unsweetened (important that it's unsweetened for it to work) soy milk for the roux. My family couldn't tell the difference and it was a hit as always!

Pumpkin Pancakes

Not as fantastic as the reviews stated. Added choc. chips after the first batch just to make them edible. They came out mushy on the inside like other reviewers stated. Used soy milk and egg replacer for allergies, but this should not affect the consistency.

Oatmeal Chocolate Chip Pancakes

This was a very good egg free/dairy free recipe. I had to cook them longer than "normal" pancakes for them not to be mushy. Family enjoyed and asked me to make again.

Blonde Brownies I

Used Spectrum shortening (palm oil) + 1 tbsp. hot water and chopped up Baker's semi-sweet chocolate instead of the chips. These were gooey and rich, but delicious.
