Cinnamon Nut Coffee Cake

An easy to prepare, classic coffee cake. I followed the batter recipe, but added 1/2 cup of sour cream to increase the moistness. I doubled the topping recipe to add to the yummy factor. Overall, this was a moist, rich-tasting coffee cake that keeps excellently. We all loved it! I recommend it to everyone! This recipe is going into my files as a keeper!

Cherry Tomato Salad

This is a most incredible salad! I used half red cherry tomatoes and half yellow teardrop cherry tomatoes (they are sweeter than the red ones). This combination added wonderful color and another layer of natural tomato sweetness. I substituted Splenda for the sugar with no change in the flavor. I also doubled the green onions, I love the contrast in flavor they provide. I followed the recipe the first time and added the pine nuts as directed. Now, to make sure the pine nuts retain their toasted crunch, I add them just before serving. This salad also tastes better the second day after overnight marination, IF you have any leftover! Everyone that has tried this salad absolutely loves it!

Italian Cheese Bread

This bread has a good overall taste; the herbs being the first thing tasted with the cheese as the undertone. I can see where it might have too much of an herb flavor for some people, though. The crust is just "OK", but it has a fairly fine crumb, considering it was made in a bread machine. I think this bread shows off its flavors better when toasted and it makes a tasty sandwich fare. I believe if you removed the dough once kneaded and mixed from your bread machine, then finished it by hand, (try it in a dinner roll form, perhaps), it would be improved. I think it has good potential!

Hearty Turkey Soup with Parsley Dumplings

This was easy and delicious! My husband, who is not a turkey soup fan, loved this dish. The soup was thicker than a broth and full of vegetables and meat. The dumplings turned out perfectly tender and puffy. The trick to perfect dumplings is to NOT lift the lid on the simmering dumplings once cooking starts. This one is a keeper for us.

Rempel Family Meatloaf

I substituted bread crumbs for the crackers. My husband enjoyed this recipe, however stated it was overall rather bland. I didn't like this recipe at all. I didn't like the onion soup flavoring, I much prefer to add fresh chopped onion and bell pepper to my meatloaf. I felt the addition of steak sauce and cheese did not make up for the lack of spices added. I had no problems with this being overly greasy because I drain off the grease as it cooks (as I do with all meatloaves). Overall, the texture and taste left much to be desired and I will only make this again if my husband requests it

Easy Chicken Rice Casserole

This casserole is easy to make and uses inexpensive ingredients, but is bland as it is, so I made the following changes to mine. When cooking the chicken, I added minced garlic, coarse ground pepper, and a few dashes of ground red pepper. I substituted 1 cup of the white rice for a 1-cup pkg of seasoned yellow rice mix. I also added garlic powder, white pepper, a few dashes of poultry seasoning, and more ground red pepper into the rice mixture before putting into the oven. Ten minutes before the casserole was done, I added shredded monterey jack cheese with jalapenos on the top. NOTE: It is important that you use the correct size casserole dish to ensure your results are neither too dry nor too wet. With my add-ons, the end result was a very good dish overall. My family prefers dishes with some kick and depth of flavor, and this recipe delivers. There were no leftovers with this! My husband loves this dish and can't wait to have it again.

Raisin Pie III

This pie is super easy to make and has now been added to my recipe library. My family loved it! In using a 9-inch pie pan, it did make a shallow pie, so next time I would double the raisins and the "sauce" mixture. I added vanilla to the mixture just before pouring into the pie pan for additional depth of flavor. I think that adding rum or butter extracts would also create wonderful taste variations. I sprinkled granulated sugar on top of the lattice crust for a crispy, sweet touch. This pie goes together fast, it uses inexpensive ingredients most of us already have in our pantries, and the results are delicious! This pie is perfect for experimentation like adding nuts, apples, pears, etc. I recommend it to anyone that loves fruit pies.
