Eggplant Supper Soup

This was delicious. I had some leftover eggplant and wanted to use it up. My husband doesn't even particularly like eggplant either and was not thrilled about what we were having for dinner. He loved it. It reminded him of a combination of french onion soup and a beef stew. I didn't use any pasta and because I'm vegetarian I use Morning Star fake beef crumbles and vegetarian broth. It was really really really good. You couldn't even taste the eggplant but there was quite a bit. This is truly a delicious and nutritious meal. I think it was the nutmeg that made this such a unique dish. Whatever it is, it's fantastic...

Sesame Beef

The sauce is so delicious. I only used 3/4 of the sugar that it called for because I didn't think it needed so much. Also since I'm vegetarian I used a bag of Morning Star "Steak Strips". My non vegetarian friends loved it. I also added broccoli and bell pepper. You can really add any vegetables you want.

Fresh Asparagus Soup

I thought this soup was okay. I am a real fan of soups and an even bigger fan of asparagus, but it just wasn't the best of both worlds. My husband thinks it may have been the soy milk - which he despises the taste of. I, on the other hand, love soy milk so I really don't know what it was. Perhaps my expectations were too high...

Creamed Spinach with Jalapenos

I made this a couple of weeks ago and it was really really good. I used a bit of skim milk since I didn't have evaporated milk and even added some ground red pepper. My husband really dislikes spinach but he was happy to eat this dish. I think I used it as a side with perogies.

Vegetarian Link Gravy

This was good and very simple. I made this without the biscuits once with eggs and toast and another time as a gravy with mashed potatoes. My non veg friends didn't even complain!!

Hamburger Cheese Bake

I made this the other night and it was delicious. I cut the recipe in half because it's only me and my husband and used a smaller square pan. I am vegetarian so I replaced the beef with a 12 oz bag of MorningStar "beef" crumbles. I put the green peppers in with the beef so that they were a bit softer. I didn't really understand the need to bake for so long (unless it was to cook real beef) and I left mine in the oven for about 15 minutes when the cheese was melted and it was delicious. Even my husband (non-vegetarian) loved it. And we both had it for lunch the next day!
