Fried Rice Restaurant Style

This recipe is great. I started by chopping up onions and fine diciing the carrots. Then I seared them on high. I also added some ginger and garlic. My rice was alittle starchy. I need to work on that. I think it was the type of rice I used.

Cheese Soup with Broccoli

very yummy. Sometimes, I add other cheeses along with the velveeta to add a different flavor but the velvetta adds a nice texture. The carrot, onion, and celery really adds a nice overall flavor.

Vegetarian Tortilla Soup

Great flavor but the tortilla chips were soggy and not so appealing. I used a fresh onion, green pepper and tomato instead of the frozen package and can that was called for.

Curried Turkey Salad

I made these for an appetizer party. I omitted the nuts due to allergies. After making the turkey salad, I served in the mini phyllo cups and garnished with fresh parsley and paprika. They were beautiful and really tasty. People who don't like curry loved these!!

Good Ol' Alabama Sweet Tea

I love iced tea. I made the recipe as directed and no one could drink it due to sweetness. Next time, I used 1 cup of sugar, 8 regular sized tea bads, and a gallon of water and thought it was still alittle sweeter than it should be. I think I will cut it to 3/4 of sugar to a gallon.

Authentic Louisiana Red Beans and Rice

My family enjoyed this. We are vegetarian so I did not add the sausage (I could have used Boca Italian sausage or something but I did not have any - next time I will try that). I added extra cajun seasoning, zucchini and jalapeno from our garden.

Salmon with Brown Sugar Glaze

I used steelhead trout for the fish and spicy dijon for the mustard. We really loved it. I think you could get away with a little less sugar for those that are health consciences. We will definitely make it again.

Chocolate Macaroon Tunnel Cake

As is, the recipe is not optimal. I like the recommendations - double coconut mix. Also, only add 1/2 batter to the pan then add coconut then cover with remaining batter so tunnel is in middle instead of bottom of cake. Lastly, I drizzled melted chocolate chips instead of the sugar glaze to add a more chocolately taste.

Big hit - the only change I made was using townhouse crackers instead of saltines. I think they have a more complimentary flavor for this recipe. I also used haddock and sole with this recipe.

Batman's Best Caesar Dressing

I love garlic but the garlic was alittle over powering. Maybe my cloves were bigger than they should have been. I think next time I will use half. I want it to have more of a subtle flavor of garlic.

Outrageous Caesar Salad

Needed a few tweaks - substitued 2 tbs sour cream for egg. This recipe is far better than most bottled dressings. Also for my Caesar salads I always add chopped avocado and chopped basil. It adds a refreshing unique taste.

Easy Vegetable Pot Pie

I love pot pie. This recipe is basically how I do it except I add Quorn Vegetarian Chicken Nuggets, frozen mixed Vegetables, Tater Tots, and instead of canned soup mix, I make vegetarian Gravy (some I put in the pie and some to put over when served). Here is the recipe: 1/2 C Flour 1 C Nutritional Yeast Foods 1/2 C Vegetable Oil 3 C Water Or Veggie Broth 6 tbsp Tamari Or Soy Sauce 1 1/2tsp Garlic Powder 1 tsp Thyme For the vegetarian gravy: Prepare gravy by mixing all gavy ingredients in a saucepan over medium heat untill a nice, thick, gravy-like consistency is achieved. It comes out best if made in a nonstick pan.

Very versatile. I made several times. I do it different ways: topped with carmelized onions and goat cheese; brie and poached pears, roasted garlic and blue cheese or plain and serve with flavored oils.

Unbelievable Spinach Calzones

Fantastic - family loved it. I used whole wheat dough from the bakery at the supermarket (healthier). I substitued green peppers for spinach on my daughter's request. I would like to try to spinach next time. I served heated sauce on the side to dip cut up pieces in. Yum, yum :)

Amy's Cilantro Cream Sauce

Everyone raved about this one - I used regular salsa since I did not have the tomatilla salsa. Some nice uses for this sauce - as a dip, on turkey and brie sandwhiches, in a breakfast burrito, add a small amount with chopped avocados for a yummy tasting gaucamole
