Monkey Bread I

Reviewed: Dec. 25, 2009
Delicious!!!!! Definitely use a bundt pan. DO NOT stir the margarine/brown sugar mixture once it comes to a boil - get it to a full rolling boil and then time it for a minute, for those who are having a problem with it separating. Will be making this for Christmas breakfast every year at the request of the family. And for the skeptics out there, you'd never know it had "canned" biscuits in it. :)

Tater Tot Casserole

Reviewed: Dec. 22, 2009
Flavors are wonderful, however we all agreed that proportion of meat to tater tots was a little high. I think another time I will use half the meat and add some veggies in place of it. Reminds me of a creamy shepherd's pie.

Tangy Barbecue Sauce

Reviewed: Dec. 1, 2009
This is good! I adapted it according to reviews saying it was too sweet (used 1/2 cup brown sugar instead of 2/3) and then added a tsp of onion powder and a couple shakes of hot sauce (per our tastes). Don't know that I will necessarily use it instead of buying the store stuff, but I can definitely NOT panic anymore when we run out! Can't wait for grill season to come back around so I can use it then - it caramelizes beautifully!

Banana Split Bread

Reviewed: Nov. 14, 2009
Even better the second day. I do have to confess to using milk chocolate chips (prefer them) and we added 1/2 cup chopped maraschino cherries (to make it more "banana split" like). I actually wasn't too enamored with it the first day but this morning the flavors were fabulous! Will make again.

Fast and Friendly Meatballs

Reviewed: Oct. 28, 2009
Very good! I made these using a 20 oz. pkg. of Italian seasoned ground turkey (didn't have any plain on hand). Want to try using plain ground turkey too. Very good gently simmered in spaghetti sauce after baking. These hold together beautifully!! This will definitely go into our regular meal rotation.

Candied Acorn Squash

Reviewed: Oct. 25, 2009
YUM! I only had a small acorn squash, so I made half the butter/brown sugar mixture (I personally would use the full amount with a larger squash - seems more like a "treat" dish to me and I have to admit to enjoying the "yummies" in the middle!) and cut the cooking time accordingly. Very good - my 8yo (my adventurous eater) enjoyed the other half with me. Will definitely make it again. Sprinkled with cinnamon before cooking as well. It was fun to eat right out of the skin with the rest of our meal.

Stuffed Pepper Soup IV

Reviewed: Oct. 20, 2009
Very good with a few changes. I used beef broth, two cans, and cooked the rice in the soup, so I had to add about 4 cups of water as well. I will halve the amount of rice another time but still increase the liquid considerably.

Lentils and Rice with Fried Onions (Mujadarrah)

Reviewed: Oct. 16, 2009
Okay if you need a vegetarian meal. Not a huge favorite, only dh and I ate this as a fasting option though but could see making again. Used brown lentils instead of green.

Cake Mix Cookies IV

Reviewed: Mar. 20, 2009
Delicious and amazingly versatile. Also, unlike a lot of other cake mix cookies I've tried, they don't have that distinctive "cake mix" taste that so many have, as well as the dryer texture. We will definitely make again with the many possible variations!

Garlic Vegetable Soup

Reviewed: Mar. 2, 2009
This is delicious! I use an onion in place of the cabbage (dh doesn't like cabbage, however it would be wonderful with the cabbage) and sauteed the garlic the last minute with the other veggies (we like a "sweet" garlic flavor rather than strong), pureed one of the cans of tomatoes, used homemade veggie stock instead of the chicken broth, and used whole wheat macaroni. Very good, will definitely make again.

Italian Dressing Mix

Good recipe. We enjoyed it. Need to play with it a little to get it to come out right - the lack of stay power to the emulsification was a little frustrating.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Jan. 8, 2009
WOW. These are fabulous. Best chocolate chip cookie I've ever had. Will definitely be making these again and again! Changes were to use margarine (no butter on hand), so I skipped the salt, and I used milk chocolate chips instead of the semi-sweet (personal preference) so I cut back on the sugar by 1/4 cup.

Snow Flake Cocoa

Reviewed: Dec. 29, 2008
Yummy. I made as written first (very rich!) and then made it with the chips and used all 1% milk instead of the whipping cream etc. Have also done a single serving in the microwave, just heat it really slowly and stir often - I don't always have a couple of hours or other people to help me drink it (only my dd likes white chocolate anything). :)

Scalloped Potatoes II

Reviewed: Dec. 16, 2008
Delicious! We'll definitely be making these again. To save time, I heat the milk in the microwave (essentially scald it) while I assemble the dish. Tastes exactly like the ones my mom used to make! I like to add onion powder and black pepper to mine.

Easy Mexican Hot Chocolate

Reviewed: Dec. 7, 2008
This was a big hit with my Junior troop (girl scouts). They had a blast guessing the "secret" ingredient (chili powder). Only complaint was that after sitting it seems to separate and there is a rather unappetizing sludge at the bottom - I think this is one drink that has to be drunk immediately, not allowed to sit (ours was made ahead of time and kept warm in a crockpot for about 45 minutes). Even whisking it back together to serve didn't eliminate the eventual sludge. I would make it again, definitely, but to drink right away.

This is a fantastic recipe. Followed exactly as written with one change - I filleted the chicken instead of pounding it out. This is divine in chicken parmesan. Can't wait to make it again!
