I made this for dinner last night and it was fantastic. I followed the recipe exactly and it was great. Quick and easy to toss together. I would serve this at a dinner party as well. Salad, a glass of white wine and some garlic bread -- is all it needs to round it out. My boyfriend took the leftovers to work and 2 people asked for the recipe. Thanks - this ones a keeper!

I just made this last and WOW! I marinated it overnight and put the meat on one skewer, peppers and onions on another, cherry tomatoes and mushrooms on 2 others -- the tomatoes and mushrooms cook fast. I made enough for leftovers, but there weren't any. Excellent recipe -- very tasty. This ones a keeper! Thanks!

Thanks for the great recipe. I just made these and they are wonderful ! I would serve these, not only with brunch/breakfast, but also alongside any mexican dinner. I had some frozen red peppers strips in the freezer and added just a couple of slices finely diced (for color), and since I didn't have any canned corn, I added a handful of frozen. Came out great. I served them with butter - but they really are good as a stand-alone. I also served them with Jalepeno Pepper Jelly - SUPER good! I might try topping or adding some mexican cheese blend next time or perhaps stirring in a spoonful or two of salsa. Thanks again! PS - I baked these in the Wilton Jumbo muffin pans. I got 12 really good sized muffins - each one a meal in itself! Yum !

I just made this. Being a Raspberry-aholic I added a touch more of the jam. Oh My! Excellent! And so easy to make. Will be a wonderful addition to my cookie/candy trays this year, IF they last that long! Thank You!

I just made these last night. I followed the recipe exactly (did not adjust the flour) and added some chopped pecans. They are wonderful! Not flat, perfectly chewy. I couldn't really taste the coconut at first, but had a couple this morning with my coffee and the flavor seemed to have developed overnight! I will most definately make these again. I'm thinking some pineapple would make them very tropical for the summer months! Thank you!
