About this Cook
I'm 54, divorced, with 2 grown daughters. I love to golf, love to cook and work hard during the week - so I do a lot of bulk cooking on Sunday to get me through the week. I'm a total 'foodie' - I love to grocery shop, love to cook, love to read recipes, and yes, I love to eat too!
My favorite things to cook
I really like Italian cooking - the more authentic the better. I also have made several 'old' recipes (medieval, etc) and completely enjoy that! (how did they do it without refrigeration or electricity?) I enjoy casseroles, stews and soups, I make a mean steak and prime rib and I love to bake (cookies, cakes, pies and fudge, puddings and custards!) yum!
My favorite family cooking traditions
My grandmother was my inspiration for wanting to become a good cook. She was from Italy and began cooking for her family at age 7 ! As I got older and had my own family my heart went into baking and baking with my children was always fun! I am known as the "MAD COOKIE WOMAN" at Christmas. Now that they've grown up and moved on, I'm back to basics, but like to twist up the old fav's with spices and herbs (from my garden) and try to make things healthier, without changing the quality.
My cooking triumphs
I can make a "perfect" Prime Rib! My cooking of Italian foods is second nature! I have created many birthday theme cakes over the years for my kids! People ask to purchase cookie trays from me year round, but I rarely have the time to accommodate those requests! Thanksgiving dinner for 30 - 2 turkeys, 8 sides and 8 pies, all the trimmings and all done at the same time!
My cooking tragedies
(Laughing out loud) -- too many to mention! I've dropped several cakes en-route to the party! I managed to drop a Turkey on the way to the table one Thanksgiving! And too many burnt pots, bad recipes and blisters to mention over the last many years! Probably the worst was, as a newlywed, I decided to keep the pasta hot for my late husband, by leaving it in the pot of water, with a lid on, until he arrived (about an hour!) - then the time I didn't know how much pasta to cook for dinner guests, so I made 3 pounds - there were 4 of us! Thank God for the garbage disposal!

Rice Pudding in a Slow Cooker
I was skeptical because there was nothing in the ingredients to tie this together and make the pudding- no egg, no cornstarc, etc. This did not turn out good at all. I used the Arorbio rice as another suggested and tested it after 1.5 hour - the rice was crunchy. Kept testing every hour - finally - after 5.5 hours the rice was done but by then, all the liquid had absorbed - so it was sweet rice, no 'pudding'. The taste was very good - the texture was horrible. I put it in the fridge and thought I would have some the next day (hated to throw it out and it did taste good) .. the next day I found a separated, watery/rice combo (strange as no water was used). I won't make this again.

Sausage and Mushroom Tarts
I like heat so I used hot italian sausage. Otherwise kept to the recipe. YUM!! And everyone I served them to loved them too! I may switch out the cheeses next time .. mozz, provalone, cheddar, oh the possibilities! Thanks for the GREAT recipe! Good, quick and easy - who wouldn't love THAT? !

Margaritas
Excellent and easy! I used 1/2 Tequila and 1/2 Triple Sec and added the juice and pulp of one lime (reamed). Made these in my slushy maker and WOW! I need look no further. NOTE - do read the review by Cooper4 for some GREAT ideas how to change this up to a blue 'rita, or a fruit 'rita! My freezer is full of limeade and I'm ready to let summer 2009 begin! Thanks for the great recipe!
