My favorite things to cook
Favorite things to cook, well i like trying new "different" recipes, and also like making stuff up every once in a while. Actual favorites, a good steak, pastas, home made pizzas for a few.

Chipotle Tilapia Tacos with Mango-Cilantro Salsa
these tacos were fantastic, spicy but oh so good. i did change the mayo to 1/2 light sour cream and 1/2 light mayo. i didn't have any spanish rice and i don't think it needed it, the black beans were good enough!

Cheesy Ham and Hash Brown Casserole
This was an awesome recipe, (i made it for people at work so i made for 36-40 servings and only thing i did is add a little milk to my soup to make sure it stayed moist.) i also sauteed mushrooms, onions with garlic and rosemary and thyme, for a little something extra, still very good!

Whit's Chicken Enchiladas
i thought this was very good, the only think i did differently was used low fat cream cheese and added onion and black olive to the saute of garlic!
