Pecan Pie IV
I made this tonight and it must have been the easiest pie I have ever made. It came out very well. Everyone loved it. I placed the pecans on top of the pie rather than folding them into the batter for a more decorative presentation and served warm with vanilla ice cream. Yummy. Thanks for sharing.

Mushroom Risotto
This is an outstanding recipe. My picky son who says he hates mushrooms loves this risotto. I use shallots instead of garlic because garlic doesn't agree with me. My bf can't stop eating it when I make it. It is worth the effort.

One Egg Lemon Pound Cake
This was exactly what I was looking for. I have now made it twice and my kids and bf loved it. It took longer than 30 minutes to bake though - more like 45-50. The second time, I added one cup of frozen cranberries for extra tartness. Easy and delicious. Thanks for sharing the recipe.
