Creamy Macaroni and Cheese

I used what I had, so it was a little different than what it should be. It was AWESOME! My only complaint was that there was too much evaporated milk/milk.

Tomato, Corn and Avocado Salsa

Wow. I first ate this at a potluck and demanded the recipe! Now, I can't stop eating it. I +/- a lot of the ingredients, more tomatoes, more avocado, less onion, I play around each time I make. I am adding cilantro this time, give it a bit more mexican taste! Oh, and I don't add the olives either.

Spinach Chicken Parmesan

My husband, who could care less about food, says that this is one of the best things I have ever made. I did do a bit less butter, and I actually added about 1/2 cup of shredded skim chedder cheese to the sauce. Next time I need to make some more sauce to put on pasta! YUM!!

Spicy Kielbasa Soup

The soup was fantastic. I did NOT like the kielbasa in the soup though. I found that it got mushy. Next time I will make this (and yes I will definitely make it again) I am going to use ham, and possibly add at the end of the cooking time.

Iced Mocha Fusion Shake

Very yummy! I did decrease the amount of sugar to 1.5 and I still think it was a bit too much. I also used a French Vanilla rather than the Mocha.

Dill Lemon Chicken Pasta Salad

I love this recipe. I made it for a potluck at work and I definitely had a few requests for the recipe. Rather than cooking the chicken, I bought a roaster chicken from the grocery store (the pre-cooked ones?) and just pulled the meat off of that. Oh, and that was with scalling the recipe WAY down! lol

Baked Tortilla Chips

These were amazing. R said that these were the best tortillas he had ever eaten. I used Ancient Grain Tortillas (basically a multigrain that had seeds in it). I sprayed them with pam, and then sprinkled salt on them. WATCH them carefully in those last minutes as they will burn VERY quickly!

Sweet and Sour Meatloaf

This was very good, although I guess you could say I didn't follow the recipe. I accidentally grabbed a can of tomato paste (yes, a large can), so I ended up mixing some of that with tomato soup for the sauce. It was very good, although I will have to make it again following the recipe. I also baked it in an 8" square pan...more crust, definitely cooked. It was still VERY moist.

Szechwan Shrimp

This recipe gets a 4 because of the ease of preperation. Very simple. I also think that the taste was a bit simple. I will need to play around a bit to add some more flavor. I will make this again though.

Crispy Orange Beef

This was very good! I liked the texture of the beef. What I actually did was slice up a roast and froze half the meet for next time. I did find the whole process time consuming, and I want to figure out some shortcuts (hopefully having the meet precut will help). The reason for the 4 stars is that it is WAY too sweet. Less sugar next time.

Kielbasa and Veggies

This was surprisingly good! I did make some changes. I used chicken kielbasa (less fat). I also used a lemon-herb seasoning and black pepper as I can't find lemon pepper. I threw in some garlic powder and hot sauce. Next time I would use hasbrowns (more evenly cut, and cook faster). Definitely make again!

Sunday Chicken and Stuffing

I personally thought that this recipe was meh....I didn't really think I would make it again. I found that the stuffing was really wet and not good when reheated the next day. I also added some garlic powder and cayenne pepper (no parsley). The reason I am rating this still rather high, is that my husband asked me to make it again! My husband doesn't care about food. He liked this! lol

Chicken Cordon Bleu II

Amazing! I made this on Thursday and I plan to make it again on Sunday! I seasoned the flour a bit with salt, pepper, and garlic powder. I also butterflied the chicken, layed the ham and cheese on the chicken, and then just rolled it. Stuck 2 toothpics in and was done. Yes, some cheese came out, but it mixes in with the sauce. Instead of pouring the sauce over the chicken, I dumped pasta into it and did it that way. Next time, I won't use whipping cream, I will use table cream or milk. I am sure I can find a recipe for a wine sauce that isn't SOOOO bad for me. I can't wait to eat this again! THANK YOU!!

Chicken Jerusalem I

I used cream of chicken (low fat/low sodium) instead of cream of mushroom and added garlic. Otherwise, made exactly as called for. Love it. Husband who could care less about food loves it.! I will be making this again, next time I will try with low fat cream cheese. I served this over egg noodles. THANK YOU!!

Asian-Inspired Honey-Vanilla Chicken

I really enjoyed this. And my husband (who never comments) said that he enjoyed it. We both have a bit of a sweet though :). It was a nice combination. I didn't have *orange juice* but I did have some frozen concentrate, so I used some of that instead of making it into orange juice.
