Slow Cooker Enchiladas
This was very easy and very good, though I added a few extra things, including a can of black beans and a can of dices tomatoes. You need to double layer the tortillas - I did not and they were almost non-existent. I also added onions and garlic to the beef while browning.

Baked Pork Chops I
My husband and I are not a fan of pork in any way... this was FANTASTIC. Will make this again and again.

Slow Cooker Taco Soup
My whole family gobbled this up as fast as they could... even the husband that "doesn't like soup" loved this and even ate leftovers the next day.
