Whipped Shortbread Cookies
Very quick to make. They were surprisingly tasty for how little ingredients were needed. I made these for President's Day (the red cherry is for the cherry tree that George Washington admitted to cutting down as a boy).
Tips: Use butter only-room temp.
Beat ingredients for a full ten minutes (I didn't need to add each individually as others did).
Add a tsp. almond extract - it goes well with the cherry.
If using convection oven, 15 min. works. Bake until golden edges.
Use parchment-they will volunteer to come off the sheet.
Kids loved them.
