I made this exactly as the recipe said- But I kindof forgot about it in the oven and it was in there for about an hour, so the outside was kindof hard. But the inside was good, moist. I havent ever tried carrot cake before, and it was great. I like sweet frosting, and the frosing was so good, I ate about a 1/2 cup before my husband started teasing me. (I'm pregnant with our 4th child and love frosting!) Anyway, it did not taste oily at all to me. I did beat the frosting for a good 5 minutes in my mixer. Very good!
