Tex-Mex Turkey Soup

What a great way to use up leftover turkey. I did make a couple of changes. I used chicken broth in place of the water and bouillon and I left out the sour cream and cilantro (didn't feel like making a trip to the store). I served with with Tostitos Hint of Jalapeno chips, which complimented the soup perfectly. Next time, I may use diced tomatoes with chilis to give the soup a little more heat.

Slow Cooker Salisbury Steak

Easy and good. The only changes I made were to use cream of mushroom soup instead of cream of chicken and to leave out the au jus because I didn't have any. Also, lean ground beef is key.

Ice Cream Sticky Buns

Fabulously easy and delicious. I just used Rhodes frozen dinner rolls and cut them in half. And I did cut the amount of sugar in half and used low-fat ice cream. Thanks for the recipe.

Honey-Garlic Glazed Meatballs

I halved the recipe, but otherwise followed it exactly. These were good, but I'll probably stick with the Cajun Appetizer Meatballs from this site. Note: I would recommend doubling the glaze if you want to serve the meatballs over rice, noodles, etc.

Deer Poppers

We enjoyed this recipe, and it was a great way to use up some of the venison in our freezer. I made the recipe as directed, allowing the meat to marinate overnight. This recipe masked any of the gamey taste typically associated with venison, which I don't enjoy. I will make this again.

Bacon and Balsamic Glazed Sugar Snap Peas

I really enjoyed these, though DH thought they were too sweet. I used frozen peas and brown sugar, as that was what I had on hand. I did like some others recommended and drained off all but a couple tablespoons of the bacon grease. I will make these again.

Slow Cooker Mashed Potatoes

I love this idea. And the addition of the sour cream and cream cheese made for a very creamy, slightly tangy potato, which we enjoyed. I didn't really care for these with gravy though, so I will stick to my old stand-by recipe when I want to have gravy.

Cherry Crunch

I used peach pie filling as I had a can I needed to use. And I used 1/3 whole wheat flour and 2/3 white flour. The flavor of this was spot on. The problem I found, though, is that there was not enough pie filling compared to the oat mixture. Next time I would use 2 cans.

Roasted Garlic Cauliflower

I enjoyed this, though DH said it had too much garlic. I cooked the cauliflower at the temp and time specified in the recipe, and it was cooked to perfection (though if you like your vegetables crisp-tender, I'd take it out sooner).

French Breakfast Muffins

I made the recipe as posted, except that I did brush the butter on the tops of the muffins. I only got 9 muffins, though I probably could've stretched it to 10. These have a nice mild flavor that would pair well with various jams.

Chili Dog Casserole I

I enjoyed this for its simplicity and ease of preparation, as well as for the taste. I only used 5 hot dog buns and toasted them in the oven while it preheated to prevent the sogginess others complained of. I used 2 cans of chili - 1 wouldn't have been enough. I also used the entire package of hot dogs and left out the onions (personal preference). I will make this again.

Hot Bean Dip

This is yummy. I did halve the recipe, but used the entire amount of taco seasoning. I used all low fat ingredients (beans, cheeses, sour cream). I heated all of the ingredients together in the microwave and then kept the dip warm in my 2 qt. slow cooker.

Tropical Salad with Pineapple Vinaigrette

This was pretty good. I did make a few changes to speed up the preparation of the salad: canned pineapple and real bacon bits. Also, I increased the pineapple juice to 1/2 c. and I'm glad I did because I think the dressing would've been too oily otherwise. I used almonds and left out the green onions due to personal preference.

Apple Strudel Muffins

These were good, but mine came out dry. I did take the suggestions of others and use 1/2 c. white sugar and 1/2 c. brown sugar. I also added 1 tsp. cinnamon to the batter. And I added 1 c. chopped apple and 1 c. shredded apple. I would make these again, but I need to play around with the recipe to get a moister muffin.
