Italian Subs - Restaurant Style

Yummy! I made this with two types of vegetarian deli "meat" (Yves Salami and Tofurky Italian style). Added a bit of Parmesan, mayo, and black pepper and it was perfect. :D

Succotash

Simple and delicious! I didn't have fresh veggies on hand when I first prepared it, but canned worked well (2 cans each of lima, corn, and diced tomatoes drained). Definitely a keeper for a quick and satisfying side!

Potato and Cauliflower Casserole

This was so delicious and filling. I substituted milk for the heavy cream and added seasonings (rosemary, garlic, and parsley). Broiled with a bit of breadcrumbs at the end. I will definitely make this again!

Easy Curried Cauliflower

This was pretty good, but a little bland and a little dry for my taste. After adding potato and extra seasonings, it was significantly better. I would make again with modifications.

Pita Chips

I did not use basil or chervil, but added parsley and Parmesan cheese. I cooked about 7 minutes on each side to make them extra crispy. Served with Garlic Spread from this site and they were a hit together. :) Plus, they still tasted great the next day!

Burrito Pie

Substituted vegetarian chorizo for the ground beef and roasted pepper salsa for the tomatoes and taco sauce. Tastier than expected! Will make this again for a filling, delicious, quick & easy meal.

Connie's Zucchini 'Crab' Cakes

As a vegetarian, I was particularly pleased with this recipe. I doubled the Old Bay, added garlic & lemon juice, and substituted crushed Ritz crackers for the bread crumbs. Baking and squeezing moisture from the zucchini were great recommendations from other reviews. It was an incredibly delicious and easy-to-make entrée.

Zucchini Cornbread Casserole

I thought this dish was bland and a bit mushy (even after squeezing excess water from the zucchini). The texture was better the next day, as was the taste with extra seasonings and cheese.

Delicious Black Bean Burritos

With additional spices (Adobo, extra jalapenos, cumin, hot sauce, and Mexican chili powder) and cheddar, these would be a five star. They would be a little bland without the extras in my humble opinion.

Creole Black-Eyed Peas and Rice
