Mom's Texas Delight

This recipe is delicious and a hit at potlucks. I use chocolate pudding instead of the coconut, but that is the only variance. Try this - you'll love it!

The flavor of this dish was awesome. For me however it was a bit greasy and I only used 2 slices of bacon. I will omit the bacon next time (maybe add spicy sausage browned and then drained). Very good side dish me and "my other" ate the whole thing in one meal! Thanks for the recipe!

Lawry's Chicken Enchiladas

This was great. I fixed it one night for my son, and when I got home there was only a very VERY small piece left for me. I used flour tortillas, and no olives. I also added about a tablespoon of hot sauce to the sauce mixture. Great eating! I'm going to make it with hamburger and sausage combo next.

Chipotle Crusted Pork Tenderloin

This is a 10+. It's freakin awesome! I never grill (3 times in 10 years), but I wanted to try something new. This is very good, and I can't wait to have a family get together to make it for them. I made this roast pork last night, and used the leftover "rub" for chicken breasts on the george foreman tonight. They were terrific also. Great flavor! The pork tasted like it was cooked on a spit fire. LOVED IT!!

Strawberry Refrigerator Cake

I did this same thing with a yellow cake mix and it was quite good. Made it for my son's birthday party last week and everyone who tried it loved it!

Strawberry Jam

Great flavor on this. I did cut the sugar to 3 cups. My only complaint is that this is almost too soft. It could be poured out of the jar, in fact it would be great over ice cream! What I made has to be spooned out of the jar. Don't know if that is the intent of the finished product or not - but still very tasty!

Creamy Orange Cake

Does this cake have to be refrigerated? If I take it to a barbecue, or an outdoor function, will the icing be yukky? It sounds DELICIOUS!

Chicken and Black Bean Casserole

If I wanted to use canned black beans, would I use a 14 - 15 ounce can for this in place of the 8 oz of dried and then cooked black beans? This sounds great and I would LOVE to try it!

Best Ever Meatloaf I

This meatloaf was very moist, and tasted good. A little bland for my taste, and will spice it up with some garlic and hot sauce next time. Overall though - good recipe!
