Pumpkin Chocolate Chip Cookies III

I've been looking for and tried many reipces for pumpkin chocolate chip cookie for a year now. I usually spend 5.00/dozen in a local bakery for these. I read all the reviews and decided to make the following changes -- added 2 tsp of pumpkin spice (kept the 2 tsp of cinnamon) and reduced the chocolate chips to 1/2 cup. My family and friends really enjoyed this cake-like cookie. I do think the chocolate chips could be reduced down to 1/4 cup.

Chipotle Chicken

My family loved it...i should have followed the advise of using only half of the chipotle peppers.....the sauce made it extra hot but my kids still loved it! Served with cilantro-lime rice, black beans, mexi-corn, grilled peppers and a salad. Topped with sour cream and avacado.

Guinness® Corned Beef

Made this for St. patricks day and the family announced that this is how they want me to make the corned beef every year from now on. Made the Amazing Easy irish soda bread as a side...paired wonderful!

Pork Chops with Sweet Potato

Very easy and minimal cost. My kids (9 thru 16 yos) enjoyed the meal. Chops were tender and the sweet potato was anjoyable mix. I didn't have mace so I substituted nutmeg.

Classic Tiramisu

I made this for my wine tasting party dessert and it was a big hit. Keeping with the wine theme I made indiviudual serving in wine glasses (12) I placed the lady fingers up against the glass and the filling in the middle. Dusted with cocoa powder and placed a mint leaf on top. Very classy looking! Very one loved it!!
