This was so delishious!!! add thick slices of tomatoes to the roasted veggies and mmm mmm mmm! every one at dinner lved it! and raved and had leftovers the nextday

This is a perfect recipie for a lighter version of the casserole. I thought it was a little too sweet for me, I might subtract some sugar of vanilla next time. I topped it with crushed walnuts which is excellent! It turned out fantastically other then being too sweet for me, and everyone loved it. It was all gobble up on Christmas Dinner.

Delish! I followed the recipie to a T and they came out perfect! mmmmm :) The longer you wait for them to cool, the more evenly they are covered when rolled in the confectioner's sugar and the prettier they will look.
