About this Cook
I am happily married to Jerry for 28 years and counting. We have 8 sons, aged 25 to 8. Four are grown and four remain at home. My biggest challenge right now is scaling back how much I used to cook for my large family.
My favorite things to cook
Mild Chili for a Crowd, Burritos, Chicken Enchiladas, Meatball Stroganoff, Chili Verde, Anything Alfredo, Pasta Bolognese, Pizza Mac, Ettouffee, Gumbo, Shrimp Creole
My favorite family cooking traditions
Making homemade pizzas together with our boys on lazy Sunday afternoons. Grilling burgers and hot links on the porch with my husband, while tipping back a few beers.
My cooking triumphs
Chili for a Crowd, Pizza Mac, Meatball Stroganoff, Beef Queso Rice, Rueban Sandwiches, Southern Fried Chicken
My cooking tragedies
Steak - until recently I always overcooked it to the point that no matter how good a cut of beef it was, it was like eating shoe leather. Now I remove it from the fire while still red and let it pink up while I dress the potatoes and veggie sides. It will yet be a triumph of mine!

Beer Cake I
This is better (my personal opinion) with devils food cake, dark chocolate pudding and guinness extra stout. That bumps it up to 5 stars for me.

White Russian
The proportions are perfect in this recipe, provided you use GOOD vodka. If you are above the age of 40, you have probably found a premium vodka you can enjoy straight, or over ice. Use this one! However, if you are in your early 20's and it's more of a challenge just to see how much of the cheapest liquor available you CAN possibly drink and still get up the next day, , then you will definitely want to adjust up the measures of Coffee Liqueur and Cream. I was 20 once. I remember. I'm 45 now and I drink premium liquor at a much slower pace!

Pink Lemonade Pie
This is so easy, you'd have to really TRY to mess it up. It's a little droopy though, in southeast Texas heat/humidity. So I added an 8 ounce brick of cream cheese to it, to firm it up a bit, and a few drops of red food coloring to make it a deeper pink. Gives it a little bit of a cheesecake flavor too. If two are too many, Freeze one of them for up to a month ~
