About this Cook
My hobby is my food blog titled Pennies on a Platter. You can find it here: http://penniesonaplatter.wordpress.com
My favorite things to cook
I love to bake...and try new recipes. I'm very visual...Usually I will not pick a recipe to try if it doesn't have a picture included.
My favorite family cooking traditions
Pizzelles during Christmas.
My cooking tragedies
I'm a klutz in the kitchen, but the food usually turns out great anyway!

Amish Friendship Chocolate Bread
I followed some other reviewers' comments and made these into muffins. I added 1 Tbsp of unsweetened cocoa, stirred in mini semi-sweet chocolate chips and also sprinkled some on top before baking. Instead of 1 cup oil, I used 1/2 cup applesauce and 1/2 cup oil. (I used cinnamon applesauce as it was what I had on hand and it tasted just fine!) They turned out very moist and chocolaty! Oh..and I used 3.9 oz package of instant pudding mix. I could not find a 5.9 oz and thought maybe it's a typo?

Grandma's Blackberry Cake
This recipe is great! I added to it by sprinkling raw sugar and cinnamon on top before baking, but not sure it was absolutely needed. I also baked in an 8" pan...so increased the temperature to 375 for the first 25 minutes. Perfectly moist, yet springy to keep the thickness! YUM!

Chicken and Biscuit Casserole
I really like this recipe. The only modification I made was instead of using a baking mix for the biscuits, I "cheated" and just dropped biscuits on top from a 12 oz package of refrigerated buttermilk biscuits. Turned out great!
